    Looks amazing 🙂 if I could add just one thing.. add the seasoning to the hot pan and toast for a few minutes. It allows the spices to enhance dish. Then add the water, you will find it makes a beautiful paste. Then add the beef. Just my opinion.

      @bradleyb7322. I can see that. I just found out that if you roast your pepper corn then put them black in the grinder then use it that it brings out a better pepper flavor. Thanks for sharing.

      I add cumin, chili and garlic powder to the packet and simmer for an hour adding broth as the moisture evaporates into the meat.

    For anyone sweating the grease, use some velveeta or american cheese along with shredded cheese, the emulsifiers will make your cheese sauce hold together better

      Growing up on birthday’s we always got to pick where we wanted to eat and I always picked Chi-Chi’s every year. So sad when ours closed. I have a new go to local Mexican restaurant I pick for birthdays every year, but still miss Chi-Chi’s.

      Bubbling?! As a TXN, who has seen much spicier from the border from what…. it doesn’t have a lot of seasonings and she shredded her own cheese so none of that extra by product to keep the cheese from clumping.
      I would make everything fresh (no pre made salsa etc). I’m going to have to invite you both over for a good home made TX Mex meal. If necessary I’ll provide the PPIs & Pepto prn (pro re nata; as needed). 😜😜😜

    You can elevate this by throwing your chips on a cookie sheet first at 350 for about ten minutes. They're warm then and it bakes out any staleness from sitting in a bag. All around it just makes them taste better. Honestly you could throw them on a foil lined cookie sheet' add your salsa and ground beef mixture on top, and then sprinkle your shredded cheese over that and maybe add onions and jalapenos, then when they come out and the cheese is melted you add some diced tomatoes and a few spoonfuls of sour cream and guacamole. The best.

    I cook the hamburger meat & make it small pieces... Add taco seasoning with a little bit of water... Then turn off the heat & add 1 can of refried beans.... You can also add some Velveeta if ya like (it's yummy). Then I put it in a bowl that has a lid & add cheddar, Colby jack cheese shredded. I just dip it. I also pour a little taco bell sauce on top. It's so Good...!!!!!😊
    You can also use the meat & bean mixture for tacos as well. I fry flour or corn. Yum!!

    Hold on! Who’s been watching me cook this? I’ve been doing this for years! If you really want it good, put the meat in a salad bowl (individual serving size), add your sour cream, lettuce and tomatoes. Then just dip your chips into it, DELICIOUS!!!!

    Drop that taco seasoning mix. It's filled with chemicals. All you need is chili powder, cumin, paprika, onion powder (or fresh), garlic powder (or fresh). Oregano. Salt and pepper.

      The woman literally says to add additional seasonings AFTER browning the meat. Any additional seasonings should be added before the beef is cooked. And I didn't say to add anything hot in the recipe. Seasoned salt or regular salt, and black pepper aren't too spicy. Literally no one says add cayenne pepper or anything else that is 'hot'

    When making homemade nachos, I also find if you are using store bought chips, popping them in the oven before you plate them also takes the nachos up a notch. Don't need long, 375 for just 4-5 mins. Just like doing taco shells 😁👍

    Been doin something very similar for about 15 years now. I take a pound of 73/27 beef seasoned with kosher salt, cracked pepper, garlic powder, onion powder, chili powder and cayenne powder. When the meat is browned spoon out the majority of the rendered fat. Take the meat out of the pan then throw in 4 clove of chopped garlic, half a large sweet vedalia onion, 3 chopped serrano and 1 large chopped jalapeño. After that cooks till soft add the meat back in, then take 3 table spoons of sour cream, half a jar of salsa con queso, handful of cheddar, teaspoon of corn starch and a tablespoon of flour. It's been my favorite way to enjoy scoop tortilla chips for many years.

      You could make a healthier version if you want...you could try ground turkey, ground chicken, or vegan meat(less grease)....then add low fat cheese or vegan cheese. Im not much of a nacho person, and i thought it looked delicious 🤤. Just know the higher fat content of the meat will equal more grease, and dont forget higher quality the cheese means less oil used in the cheese.

      There's taco season added..and it has alot of flavor..plus you can add more seasonings.

    That sounds good. Plus, going with salsa instead of rotel seems better for amount control, and it stores in its own jar .

    Does the flavor have a vinegar bite to it? Those jarred salsas have vinegar.
    My own personal preference would be to add salsa after its done cooking. That sour cream helps with the salty taco seasoning.
    It looks fantastic. Create your own taco seasoning! Chili powder, paprika, garlic & onion powder, cumin & oregano. You can salt to taste.

    I kinda do this too, but I add drained black beans, drained corn and black sliced olives tomatoes and lettuce with Pico di galo. And I use fruits scoops instead of tostitos
