Cool! Where are you at at the moment? For all the bigger hunting fish a squid lure works best in my experience. Just put two trolling lines out, one from each stern.
I have the fore and aft guys to the cleats on the bow and stern. And use a halyard to lift it up. This way it is fixed in place all by its own. I then run an (old) extra sheet through the end and tie it off to the Genoa. This to prevent chafe on my nice sheets and that way I can let the sheet go and gybe the Genoa to the other side if needed. I set all of it up with the Genoa furled and then just unfurl it to the boom.
When fishing on the back I definitely make sure to clip myself in to the boat, like you say not looking forward to threading water till the end. But thanks for the worries.
