We do this too! We order ginger from azure and peel, mince, and freeze in ice cube trays to use as needed. Trying to grow it this year in zone 7a so we will see how that goes.
If you want to switch up your lasagna, you could try what we do. We are not gluten-free, but my husband thought to try this, and we love it. I use dehydrated salt and pepper zucchini slices/chips. I grease a 9x9 pan and then layer the zucchini chips, add the meat mixture (however you make it), and then shredded mozzarella cheese. Repeat and then bake at 350 degrees for about half an hour or until bubbly. Make sure the meat sauce is a bit more runny to rehydrate the zucchini chips.

Thank you for fresh ideas. I’m with you on winter eating. We farm and do much of the same as you do including venison. I am even more simple because I cook for our farm dogs as well. One pot large dishes with a side or two works to make enough for two to three meals. A seasoned patty or a crock pot roast work fine. We rarely have enough veggies for the winter so we trade with another farm that can grow greens in winter. It sometimes means we have less to choose from which is all my grand parents had. We do pick up staples once in a while, but we don’t go to the grocery store often.
It sounds like you've got a really great system down! Love that you’re trading with a local farm and I totally agree with you on the less to choose from. That used to be the norm and thinking about that helps me be okay with the simplicity

Full of God made nutrients. Thought I’d throw it out there but maybe you have and it wasn’t good for you. Lots of stories where people could eat fresh milled flour. Looking forward to your videos!!

Hey. I found y'all today. I've been binge watching! 😁 I started homesteading in 2008 in a neighborhood with an HOA.boh the stories I could tell. I bought the 6.5 acres I'm on in 2012. It was a repo and I took 401k money and bought it outright. But in 2017 I moved to Scotland to pastor a church. I'd lived there before and they asked me to come back. In 2021, I had to take back my farm because the guy living here died. And he ruined it. So I'm slowly getting in back in shape. We had meat and egg birds before. My favorites were Dixie Rainbow and Red Rangers. I'm ready to get back into chickens, but I can't find Rangers anywhere. Where do you get yours. The place where I used to get mine closed up. I'd really like to get a few. I found the rainbow, but the Red Rangers were the perfect meat bird. I free range them during the day. Anyway, thanks!!

Butternut squash: we have a friend w. a sugaring farm, in Vermont, we get some Maple Syrup. Drizzle a wee bit on the Butternut, same roasting as you do.
I'm curious, since yours north. What kind of fishing is there? You spoke of venison, but you're in the land of 10,000 lakes. Are you close to water? Do you enjoy fishing? Our lakes are too contaminated with mercury. There are charts out telling how many fish is safe to eat from each lake. Its a bit scary to think about. I too only make 1 meal a day. 💚🌞
I wish we had close access to fishing. Surprisingly, despite all the lakes in MN, we don’t have one nearby. Lots of marshy stuff, but not much for open water. Sunnies, walleye, northern pike, and crappies are most common around here.
Are your blackberries wild? I'd love to grow them, but everything I've found says zone 5 and I'm 4A. You're even colder than here, so if you can grow them I'd love to know the variety, if they're cultivated rather than wild. Thanks!

You can get ginger from azure. Throw it in the freezer and grate it when you need it in a recipe. It’s easy to grate frozen.
Yes, I am able to grow it here in Fl but we freeze the majority of it and use throughout the year.

Yep, they grow wild around here. They are quite prolific! We have thousands of them along our trails

How do you incorporate fruits?
We mostly stick with frozen berries and apples. I’m planting a few new kinds of berries this spring. Can’t wait!
