Thankyou. Also maturing in an airtight container, what happens if you don't (sometimes I run out of containers haha)
Hi, Aimee. So glad you liked my video and found it helpful! Airtight container is to prevent different smells from other stuff in the fridge seeping into your macarons.
I think it's because they weren't set in the fridge, or there was too much liquid or it was a hot day. More sugar will make a tougher buttercream if you don't mind the sweetness.

Aww, thank you so much!!! Yes, you can freeze shells alone. Thaw them in the fridge before filling them though. Depending on your filling, you can mature macarons at room temperature. But I like to be on a safe side and refrigerate mine.
It depends on the purpose of shipping, I guess. You can freeze both filled or unfilled macarons. If I were gifting them to someone, I'd fill and mature them before freezing. But if your receiver needs just the shells, then send them the shells. Unfilled shells don't need to be frozen.
Great advice about using buttercream as buffer for moist fillings. My macarons were getting soggy.

My Swiss meringue buttercream always oozes out. Doesn’t your buttercream do that? I love all your tips!
