    Great advice about using buttercream as buffer for moist fillings. My macarons were getting soggy.

    This was super helpful. I just made a macaron with a Creme Patisserie filling and I had the issue of it getting too soggy. Now I know what I should have done with some ganache or buttercream. Thankyou. Also maturing in an airtight container, what happens if you don't (sometimes I run out of containers haha)

      Hi, Aimee. So glad you liked my video and found it helpful! Airtight container is to prevent different smells from other stuff in the fridge seeping into your macarons.

    My Swiss meringue buttercream always oozes out. Doesn’t your buttercream do that? I love all your tips!

      I think it's because they weren't set in the fridge, or there was too much liquid or it was a hot day. More sugar will make a tougher buttercream if you don't mind the sweetness.

    Can I freeze macaron shells without filling and take them out when I need them? And then put fillings and mature them? Room temperature or fridge? Thank you so much!

      Aww, thank you so much!!! Yes, you can freeze shells alone. Thaw them in the fridge before filling them though. Depending on your filling, you can mature macarons at room temperature. But I like to be on a safe side and refrigerate mine.

    Can you freeze the macarons then let it mature in the refrigerator for 24-48hours?

    Can I freeze unfilled macarons? If they have a little bit hallow, should I fill them first then freeze? Thank you

      Yes, you can freeze unfilled macaron shells.

      No, unfortunately I don't. However, I included "print version" without photos so it's easier to print.

    If i want to ship the macaron, should i freeze them filled or unfilled before shipping them?

      They last longer unfilled so that may be something to consider

      It depends on the purpose of shipping, I guess. You can freeze both filled or unfilled macarons. If I were gifting them to someone, I'd fill and mature them before freezing. But if your receiver needs just the shells, then send them the shells. Unfilled shells don't need to be frozen.
