    In this COVID special, Summi follows the journey of Big Mike's Calypso Kitchen - the restaurant that relaunched itself during the coronavirus outbreak!
    From being just two weeks out from its initial opening date of late March 2020 at Boxpark Croydon, Big Mike's Calypso Kitchen quickly found itself in a state of limbo in light of the UK-wide national lockdown imposed on 16 March 2020. This Food For Thought episode documents the 4 month period of uncertainty over which Big Mike's Calypso Kitchen had to swiftly adapt and conquer during one of the biggest recessions in modern history.
    Summi tries out the new V-squared menu (vegan x vegetarian = plant-based menu) at Big Mike's tasting party and also tries out the smoky jerk chicken made with the big Bertha barbecue over at the new unit in Boxpark.
    Big Mike also shares some tips on what he had to do to adapt to the pandemic and what his thoughts are for the future of the hospitality industry.
