the diagram you have for the FEX connecting to two different Nexus's switches is wrong as you cannot cross connect FEX's to different cores, as you know the FEX gets its configuration from the core and if it was connected to two different cores it would not work, in fact the other connected ports would show up as error disable

***** Yes only for the 5k series but they are pretty much end of life now, from the 6k to the 7k this is no longer possible

If you can’t do on the 6k or 7k what’s the alternative than using a fex?
you mentioned ccna data center at around 4:15, did you mean to say ccnp dc, or is there a ccna level course for this?
