You can use a kitchen robot to cut the fruit. Then place it 1 night in the freezer (plastic bags ?). Once it is no more frozen you can get the juice out of it.

The hydraulic fluid can be replaced with veg or canola oil. The jack will loose some power but not much.

That is a real issue.
Oil is poison.
When things go sideways 😂 you have to dump the juice.
Also the energy involved is a bit dangerous....
