It is also rich in monounsaturated fats, unlike butter and lard, which are high in saturated fats. Seed oils are polyunsaturated but might contain trans fats, which are terrible. So, avocado oil wins in every category except flavor, which is subjective. Also, for high-temperature cooking, you can use clarified butter (ghee) because it has a much higher smoke point.
