  • This pesto uses less basil, drops the pine nuts, and adds a bunch of green peas. What results is a sweeter sauce that tastes really close to the original version except for its higher protein and lower fat. This pesto is perfect for whipping up pasta dishes, pizzas, or salads in no time.

    Ethan you should try making a Dominican breakfast called “Mangú con Los Tres Golpes”. Mangu is a mashed plantain, and the three hits are the fried cheese, fried salami, and fried eggs. Traditionally this breakfast is topped with pickled onions. I think you would love it and would be interesting to see you take a shot at it.

      I keep seeing westerners (especially Yankees) eating peas as side dishes with their chicken and mash. And pea soups, or other soups of any kind
      Oh, and when fried rice cooking was involved, they put peas in mostly along with other vegetables

      You could also use different seeds. Sunflower seeds works really good in pesto. Very nutty taste.

    Roasted sunflower seeds are also a good pine nut replacement.
    Peas seem to do more work, stretching the basil at the same time.

      you are having a laugh, but there is a market for PROPER stuff for folks with dietary considerations, ethicals or medical. develope a proper line of VEGAN high protein fitness shit and you´re minted for life. Vegan markets are booming, but they´re still getting shafted on some.

    The pea pesto idea was brilliant. I used walnuts and watercress beside the left over basil because they were lying around and it was brilliant . Steamed peas for about 1 minute don't have a microwave made everything instant heaven. Tx!!! Did use romano etc. try to be vegan but if not hurting the planet wth. My mum was Polish and an amazing cook really grateful for yr videos wonderful memories.

    I highly recommend trying garlic scape pesto!! It's incredible, especially with self-grated parmesan. Sooo garlicky and flavorful

    Ethan you are a genius!!!! I'm 90 percent vegan do I cheat absolutely .... I LOVE this had the homegrown cherry tomatoes plus runner beans I could have used small potatoes but had Italian penne which ... forgive my terrible italian is buckwheat, corn as in polenta, some wheat think it's Farro comes out like regular pasta cannot tell the difference except well ,,, the easiest thing to do with all that basil a year later many thanks! My mum was Polish and love your nostalgic peroghi recipes also meeting up with Alex the French guy ... lived in France for many years he's the real deal .... keep on !!!!!

    Hey Ethan, i'm from Brazil and i would love you to try a classic dish from here Fried Cassava, AKA mandioca frita! It might be better then french fries becouse it is more crispy and also soft and creamy on the inside! It might be a bit hard to find raw non cooked cassava (witch is preferable), but if you do, here is the proceedure: Peel off the skin, give it a little rinse and cook it in a pressure cooker for about 30 minutes or untill it's really soft and borderline mushy, and here is the thing: cassava has a higher starch content then potatos, does making it more dense and can be done to a consistance of mushiness and still hold integrity, witch is the preferable state for it. I usually fried them right afther pressure cooking them (i just wait about 20~30 min afther cook, they are still hot doe). Afther that frie then until golden&crispy and add some salt. I hope you can try the recepie and improveit.

    Thanks for this recipe! I have some frozen peas that just turn out mealy when I cook them, but this recipe is a great way to get rid of the nasty texture. Turned out great!

    Massimo does something similar to this, using mint. He got a lot of flack for it, but people forget that Italian cuisine, including pesto is in essence a product of necessity and the environment.
    Also, he's a world renown chef!

    Thank you so much. This is my new favorite recipe! Doing low carb I have just been putting it on as a sauce for chicken, fish an eggs. It is so good and simple. I love pesto but buying pine nuts is almost a pet peeve their so expensive. Just use some peas instead. Highly recommend to everyone!

    Going to try this with vegan Parm. (Dairy allergy) Thanks for coming up with a version that doesn't use pine nuts. They're way too pricey for my budget.
    A wide mouth canning funnel might be helpful for filling the deli containers- less pieces overboard.

    i've been binging your videos today and this is random but - i really appreciate how you rarely roll your sleeves up, and when you do, it's just above the wrist, not all the way into a tshirt. it's so unnecessary and a pet peeve of mine when guys do that lmao. plus it shows how efficient / clean you are when cooking/cleaning. you wear black long sleeve tops and hardly ever get debris on them!

      there's nothing inherently "wrong", i just find it unnecessary when some people wear long sleeve tops but insist on rolling up the sleeves to make them even shorter than standard tshirt sleeves... just wear a t-shirt? or a vest! 💀

    Me and my family do a very similar version to this, but instead of Peas we use Asparagus. Its really good, and really close to the OG version. I'll be sure to give this a try!

    I like the idea of using frozen peas since, like you said, they're way cheaper and extremely versatile (although I still prefer my peas steamed, tossed in a little butter, and salt and pepper since I feel like they're good as is and don't need a ton of extras). Plus, this is a really good way for someone with a nut allergy to enjoy pesto.

    Ethan, really nice change-up on your pesto! I like to sub pistachios for the pine nuts in pesto. You gotta check the country of origin on the pine nuts because most come from China and are of dubious "organic" authenticity.

    For the pasta salad, I would have mixed the dressing in the big bowl first, then added veggies and pasta. If you're mixing it all up anyway, it saves an extra step (and dishes).

    I'm curious, would mortar and pestle bring out more basil flavour like you mentioned in an earlier video? Can the basil be ground on the mortar and added to the rest of the ingredients in the processor?

    Should the frozen peas also be microwaved before using or would you just let them thaw beforehand?

    You should try picking up the basil leaves the right way, so you could have a continuous harvest, instead of just butchering the plants 💚
