    Lauren earned a Certificate in Plant-based Nutrition from the T. Colin Campbell institute from e-Cornell. She has had an article and recipes published in Health Science Magazine, has spoken at various conferences including a large wellness conference for pharmacists and the Holistic Lifestyle Expo, is a popular guest on Chef AJ’s TH-cam channel, and interviews many plant-based luminaries on the Plant-based Nutrition Support Group’s streaming platform.

    Baked Macaroni and Cheez with Buffalo Cauliflower Crumble
    I usually make the crumble part first (recipe below). That way it is ready when the pasta is ready.
    For Macaroni and Cheez
    Ingredients:
    8-10 ounces of your favorite pasta (I use a lentil pasta)
    ½ of a bag of frozen broccoli or 2 cups of fresh broccoli chopped (optional)
    1 cup vegetable broth
    ¼ cup of cashews
    1 can garbanzo beans (a.k.a. chickpeas) drained and rinsed
    ¼ cup of nutritional yeast
    Juice of half of a lemon
    sprinkle of turmeric
    1 teaspoon garlic powder
    1/2 tablespoon of onion powder
    1 teaspoon smoked paprika
    Salt and pepper to taste
    Method:
    Bring salted water to boil. Blend all ingredients for the sauce (everything from the vegetable broth on down) in a high-speed blender. Throw pasta into the boiled water and cook according to the directions. When pasta is one minute away from being finished throw the broccoli into the pot. Drain pasta and broccoli but do not rinse. Pour the sauce from you high-speed blender into your empty pot. Add just enough pasta and broccoli so that it is still very saucy and mix well.
    Make the Crumble:
    Ingredients:
    1 ½ cups riced cauliflower
    ½ cup cornmeal
    1 tablespoon of a whole-grain flour (I used millet)
    ½ cup plant milk
    1/3 cup of Frank’s Red Hot or Cholula hot sauce
    Stir cornmeal, flour, and plant-milk together. Dump riced cauliflower into cornmeal mixture. Stir until coated.
    Oven method - Line a baking sheet with parchment paper, spread cauliflower into a thin layer, bake at 425 for ten minutes. Stir and re-spread thinly, cook another 6 minutes. Coat in hot sauce.
    Air fryer method - spread a thin layer and bake at 400 for 6 minutes. Stir cook another 1-2 minutes, check after 1 minute. Coat in hot sauce.
    Move the mac and cheez from the pot to an 8x8 baking dish.
    Top the mac and cheez with the crumble and cook for 5 minutes at 425. Remove let cool for ten minutes.

    My brown rice comes out excellent. 1 cup rice to just under 2 cup water or broth for 19-21 minutes. Let naturally depressure. I've not had any rice not come out good. Also to the rice I might add about 1/3-1/4 cup red lentils (rinsed). When adding the lentils about 1 3/4 cup water/broth is good. ( To be honest, I really go by vibes when adding the lentils.) I sue the same measures for millet and quinoa.

    YANKEE DOODLE - a "doodle" is a simpleton. To be a "macaroni" in those times was to be stylish. So, Yankee Doodle put a feather in his cap making him more stylish, or quite the macaroni.
