Thank you so much for this! Because of this video, I started searching for a used smoker and I found an Oklahoma Joes Longhorn for, get this, $80! It was in need of a cleaning but it's in great condition. Very little rust and it's solid. I took the pressure washer to it and had to use a wire brush in a few areas to get out some old ash. It's seasoned now, broke it in with some Chicken thighs (again following your video on Chicken thighs) and they came out great. Hoping to try a pork butt this weekend. Again, thank you so much! ! !
I have that exact same smoker - Bought it new in 2004. The fire box has seen better days but it's built like a tank will get many, many more years of use. Love the channel!

It hasn't really been used since, so I know it'll take some TLC to get it back into good condition. Now I've got at the very least a starting point for how to analyze and tackle that project.

I found an old New Braunfel's Offset (small sticker) on the FB maketplace. Pulled it apart, wire wheeled, BBQ painted the outside, then seasoned the inside with vegtable oil. I even added a fireplace gasket and toggle clamps to seal her up. Now if it wasn't 45C in my town I'd get some smoking done.

I took an old Oklahoma Joe’s to the next level. I have done this on all my offset smokers since it worked so well on the Joe’s. I line the entire smoke chamber bottom with fireplace brick. Once the brick gets to cooking temperature it maintains the heat and helps with convection heating. I hope you read this and try and let me know what you think.

I have a smoker like that I converted to be a reverse flow. I tried to use it as a stick burner but it was a PITA given how small the pieces of wood needed to be.
Do you not have to scarp off any rust before spraying? Or is it better to scrap with steel wool first and then spray down? My cast iron grates on my Oklahoma joe combo grill are rusted as well as some rust on the inside of the pit. Thank you in advance.
You got me into this . Your the best wish me luck I bought a new WSM 18 from my research after doing pretty ok on an old charcoal grill where it had leaks , was rusted out at the ash and damper section and old . you taught me a lot through your videos.

I wish the propane section had decreased BTUs at minimum because that is just took hot. Yes, I know they had fun with naming more than one product Longhorn. It is quite easy to make it so you remove the grease pan from the front like it should have been made to do.
Loved how you geared this to the average backyard cookers! Kinda curious what are your regular maintenances? Like how often do you scrub grates and do any sort of cleaning inside the chamber and how to perform that properly?

Jeremy, would you do a test using your ok joe and a stack extension? I'm cooking with a ok joe and find that a stack extension helps a lot, but only if you're cooking 275-300.

Got a joe just like that one thats been my go to for a good 5-6 years. Bought it used in like new condition for $200. Its seen a ton of miles. Mostly burn wood in it. Occasionally a charcoal chunk mix. Installed a bbq guru on it couple years back. It will hold consistent temperatures better than most pellet grills. And its definitely a typical offset. It will burn clean all day around 260-275. Gets really dirty smoke if you try to smoke to low. Would love to buy an Old Country Brazos. But until this thing rots away... I guess I will keep putting meat through it.

Gasket tap around the seams. High heat caulking around the outside seams (where the box attaches to the chamber. Clamps on the outside of the chamber door.

Would love to see a brisket shootout with the old country brazos vs the Franklin. I am really on the fence about getting the brazos or moving up to the next tier. ( though I’d probably target a workhorse pits instead of the Franklin )
I was on the fence also...that is till I heard how long the waiting list was. I pulled the trigger on an Old Country Brazos DLX and I'm loving it. Not the greatest as far as craftsmanship, the doors don't deal properly, the grate don't fit properly and the wagon wheels are bent. BUT....its 1/4" steel and with some gasket seals and a stack extension (all under $40) she's been working gteat. Best of all it was 1/5th the cost. I love that clean smoke flavor you can only get from an off set.

I own one these. We got for 800$ brand new. Its at least 20 years old and it works like it should. I use mine as a grill also.

I think it is about the technique more than the equipment. Temperature control and clean smoke are key things to focus on!
