Hello, "CAU CAU" is made from the belly of the cow and it is not a soup, it is served with rice, it is a homemade meal. The "CALDO DE GALLINA" is made with hen, it is not made with chicken, the hen is harder than the chicken and has a different flavor. The sauce that accompanies most Peruvian dishes (onion, tomato and coriander), is called "SALSA CRIOLLA".

The cau cau is eaten with some lime juice on top and white rice,with salsa criolla 😋👌hella good, same on caldo de gallina lime juice, green onions,canchita👉 (toasted corn) and rocoto spicy sauce, lucuma is a Peruvian fruit,😋👍🇵🇪❤

"cau cau" is not a soup 😅, it should be eat with white rice and less juice, with rocoto that is the spicy pepper with onions and lime. The chicken soup has gallina (the female Chicken, I don't know the word in english), it has to be eaten with spicy and lime, in that way you can feel more the flavors. Hopefully you going to be able to come to Peru and to try those dishes with Peruvian ingredients 💗
La cancha solo debe ser presentada en la mesa para picar previa al Ceviche, NO para ser servida en el mismo plato, por la sencilla razón que en el Ceviche sus insumos son todos frescos y al natural... Un maiz frito de horas, oscuro, duro y aceitoso no tiene razon de ser en este plato porque distorsiona la presentación y el sabor...

Lucuma is a fruit from Peru 🇵🇪 It is added as ingredient in Ice-Cream and juice from Blender
