Would it be better to put a low point in the middle of the the structure to allow oversplill rather than washing away the sides? This would need some rocke to act as scouring on the downslope. Looks very steep, a lot of potential energy there.

The difference in height between the ends and the center should be determined by the amount of flow that the stream gets to be sure the difference is great enough. A lesser flaw is that the foundation should be set in gravel pounded firmly, with more gravel filling between the boulders. Additionally, the slope of the downward side should be shallower if the slope of the waterway is steep. This makes it surer to withstand collapse from erosion at the structure's base. This can be enhanced by seeding a suitable clover or similar groundcover plant on the downstream side in order to trap sediment at the base.
