2 and a half times water to 1 time rice . Is what I was taught, and results in perfect texture. Meaning two and a half cups of water to one cup.of rice. Keeping in mind I use parboil rice.
For parboiled rice I would use 1 part rice 3 part water. For white rice I use 1 part rice 2 part water, I cook mine on very low heat, once the water evaporates it might look not done, I don't add any more water I let the steam finish it off and it's always perfect.
I don't cook atall with olive oil, burns too quick and can't stand the over powering smell, avocado oil is great but expensive. I go with what's affordable but of course any oil can be used here it's just a matter of personal preference and budget lol.
Do you ever try straining your rice instead of steaming it? Check when the grains are fully cooked firm but not underdone, then drain it through a rice Callander and run some cool water over it, let it sit in the fridge overnight, should have no issues.

Every thing Candy is so 😋 but canola oil is very bad for frying cooking u can Google it Olive oil or avocado oil is the best for salad and cooking 🙏🏻
