    For those that don't know. This is one of the most brilliant doctors in the world. He saved my life in the cath lab last year. Being a practitioner myself and in cardiology for 25 years , I can assure you that his skill level is impossibly high. I'd not be typing this without him. Please listen to his teachings. He is not wrong. Thank you Dr. J.

    🎯 Key points for quick navigation:
    Advanced glycation end products (AGEs) are harmful compounds formed when sugars attach to proteins, lipids, or nucleic acids, causing damage to various bodily functions.
    AGEs contribute to inflammation, oxidative stress, and premature aging, leading to chronic diseases such as diabetes, cardiovascular issues, kidney problems, and neurodegenerative conditions.
    AGEs can be generated not only from high blood sugar levels (diabetes) but also from other factors like high fructose intake, lipid peroxidation, alcohol consumption, and smoking.
    Consumption of processed foods, especially those high in sugars and fats, increases AGEs in the body, affecting the microbiome and overall health.
    Continuous glucose monitoring is crucial for understanding individual sugar responses and managing AGE formation.
    Inhibiting AGE formation can be achieved through lifestyle changes, including dietary modifications, reducing sugar intake, and practicing intermittent fasting.
    Certain vitamins and natural compounds like curcumin, alpha lipoic acid, and flavonoids found in vegetables and herbs can help counteract the formation of advanced glycation end products (AGEs) in the body.
    AGEs are formed when sugars in food combine with proteins and fats during cooking, especially through processes like reheating, frying, baking, and grilling, leading to tissue damage and various health issues.
    Foods high in sugar, processed foods, and animal products are particularly rich in AGEs, with cooking methods like frying and grilling exacerbating AGE formation.
    Consuming moist-cooked foods, marinating with lemon or vinegar, and avoiding high-temperature cooking methods can help reduce AGE formation.
    Processed meats, fried foods, and high-carb items are among the worst offenders for AGE content, while fruits, vegetables, and moist-cooked proteins tend to have lower levels.
    Proper cooking techniques such as poaching, stewing, or steaming can significantly lower AGE levels in food, making them healthier options.
    Understanding the formation and impact of AGEs can help individuals make informed dietary choices to mitigate health risks associated with AGE consumption.
    53:16: Cook pasta al dente for fewer AGEs; avoid overcooking grains and legumes to minimize AGE formation.
    54:26: Opt for raw nuts over roasted ones to reduce AGEs and lipid peroxidation.
    55:45: High-fat spreads like cream cheese and mayonnaise are high in AGEs; choose ghee or refined coconut oil instead for lower oxidation.
    56:26: Avoid dry heat-prepared snacks like crackers and cookies to minimize AGE intake.
    57:08: Fasting reduces glycation and slows aging; intermittent fasting can improve health markers and longevity.
    59:28: Lower AGE intake improves collagen health and reduces skin aging.
    01:02:16: Inhaling AGEs from cooking oils can harm lung health; avoid inhaling smoke from high-temperature cooking.
    01:06:45: Three golden rules to reduce AGEs: avoid vegetable seed oils, alcohol, and processed foods; opt for fresh, unprocessed ingredients.
    01:07:55: Honey, especially heated, is high in fructose and AGEs; limit consumption for better metabolic health.
    01:10:32: Methylated B12 complex supplements can aid in AGE reduction and improve genetic expression.
    01:13:08: Intermittent fasting can improve health markers and reduce inflammation; protein intake is crucial during fasting to support detoxification and ketogenesis.
    01:15:12: Calcium score and epigenetic aging clock offer insights into arterial and physiological age; anti-inflammatory lifestyle and diet are key for arterial health.

    Hands down the most profound lecture I have ever heard. After looking up this Doctors credentials, and listening to his passion on prevention of CAD and many other diseases, Ive subscribed. He literally saves lives as a cardiologist. Also, he inspires and educates people on how food effects the body. One can think that they are eating healthy, managing their lipids, sugars, but have no idea that grilling our food or cooking in high temp is contributing to disease. Discovering AGEs is revolutionary.

    • @MrBluebirdOnMyShoulder
      @MrBluebirdOnMyShoulder 4 หลายเดือนก่อน +1

      That confuses me. The benefit of a pressure cooker/ instant pot is that the temp is HIGHER than boiling. Under pressure. Maybe less AGES that frying or grilling but ? ?
      I just started sous vide cooking and like it a lot, but it takes more planning.

    • @ohmyhellx
      @ohmyhellx 4 หลายเดือนก่อน +2

      @@MrBluebirdOnMyShoulder The key is having moisture. Wet cooking doesn't produce ages. I've seen data on this from NIH and other sources, similar to what Dr. J shows in his next video.. Are the plastic bags safe for sous vide? I'm sticking with my pressure cooker, my best friend in the kitchen. So quick and efficient.

    You are a genius. Its a pleasure to come across this video. So full of knowledge. After I lost two of my most beloved family members, and saw my mother lost a Kidney, I began studying cancer. I got obsessed. Carbohydrates, sugar, glucose,fructose, enemies by themselves, but combined? ☠️ Then you throw dehydration and a sedentary life (lack of oxigenation, not moving enough, not exercising), and an acidic environment that comes from insulin resistance, not having homeostasis, etc. You begin to understand aging, diseases, cancer. Free radicals, oxidative stress, Glycation, are crucial terms, that need to be fully understood, to live a better, healthier live. I think that’s all we want. Peace, be free of diseases, and enjoy this life.

    I haven't had sugar in any form in 5 years and zero carbs from other foods in 10 months. I am a Carnivore and still testing lipids and proteins in the ratio of what I should consume daily. I consume fatty beef and lamb , salt, and water. At one point in my journey I believed I was eating too much protein so I upped my fat intake and lowered my protein. I am 68, lift weights 15 hours a week, and feel pretty damn good.

      I went heavy meat for last 6 years, and I appreciate that carnivore seems to be therapeutic, for awhile, for some people. But those who think they are doing o.k on carnivore should check their LDL, and, more importantly, get a coronary CT angiogram, to look at soft plaques in their cardiac arteries. If you have significant soft plaques, then you can decide what to try, but I think we're going to see a large cohort of carnivores with problems in the future. But my guess is most will find some way to deny the causation to carnivore, if, in fact, it is causal, as most cardiologists think. Godspeed.

    • @andredaedone7732
      @andredaedone7732 4 หลายเดือนก่อน +2

      @@CraigCastanet soft plagues are caused by sugar and garbage food and LDL is not a real problem as long as they are healthy. The only issue with eating a high saturated fat diet is if you are eating shit food, sugar, seed oils and all the other bad stuff people put in their bodies at the same time. I was Keto for 5 years then jumped to Carnivore and since I have been on Carnivore so many positive things have happened externally, I can only guess the same things have happened inside my body. Overthinking eating caused the disease that is happening among the population today. Heavy meat is not Carnivore so please do not pretend you know what you are talking about.

    Thank you for all of the detailed cooking information and for pitching your talk to a general audience.
    Glad to hear our Instant pot, microwave and other ideas meet with the criteria in this detailed talk. (Is the non stick surface safe?) Thank you again.
    I only wish the food industry, factories and shops could catch up. So many products on shelves that are contributing to the inflammation on bodies of people we see everywhere. Observing this here, from New Zealand.

    This is incredibly useful information for a dedicated home chef! And yes, I usually just brown my chicken or pork a bit in butter and oil, add spices and then cook on low-medium until ripe.
    Maybe that thing for simmering and cooking in spicy liquid (teriyaki, chicken tikka, chili con carne...) is a cornerstone of health for me, personally.
    I've paid plenty of attention and made changes from independent, kind of contrarian scientists and they definitely know what they're doing. Dr. Jamnadas is among them. So thanks for that!

    Very educational lecture. Although, nutrition is very important in managing AGE's, Dr. Jamnadas refers to fasting as a way to mitigate the effects of AGE's but, never mentions exercise. Exercise has been shown to be main factor in preventing the accumulation of AGEs and, reducing AGE levels through a reduction of insulin sensitivity, fat mass, inflammation, and RAGE expression. Furthermore, nutrition and supplements will not reduce natural aging effects while exercise prevents and can reverse sarcopenia and lost of heart capacity through cardio and strength training. Ref. Dr. Benjamin Levine's work
