    In this part of the video he says that the sign said Pizza,but it's a fine dining French Restaurant and I remember years ago when you wanted the best restaurant in queens you went to the WATERS EDGE off the Hudson River but it's closed now and if you wanted a fine dining restaurant you went to a place underneath the Brooklyn Bridge called THE RIVER CAFE, and many fine CHEF'S worked there and I know some of them and it's in the middle of nowhere. You might be surprised because they are so small you would pass it and not notice it but word of mouth passes very fast people's secrets and only talk amongst themselves but I have a keen eye for places like this. But I look at everything from the decor,ambiance,menu,location, and price structure,and I will try it to get a feel for the place the vibes as they say.

    In this part of the video he is talking to his cook about the omelet station and I remember years ago when I worked in the hotel and the executive sous chef said that there was a problem on the line to go camping so I went to the line and said that a woman had ordered a break and she ordered eggs soft scramble and sent it back 3 till so I had to teach the breakfast cook how to make them sad but true and when I was in cultures school it was a 1 week course. Cooking breakfast is nothing for me it's actually very easy as long as you understand the basics.
