    It doesnt half look good....Never had it before and now...CANT wait for the supermarket to open so I can buy the ingredients....How did I miss this????? By the sound of the umms and aaahhs I think that I am going to be hooked for life...THANKS awfully!!!!!

    Currently bucketing it down with rain here in Liverpool in the middle of May so making this tonight for some Saturday night comfort food

    A nice comfort food. We can’t get suet herein the USA, either. Didn’t you tell us that there was something that can be done with frozen butter?

      Yep, you can freeze butter, grate it and toss the shreds in flour.

    Hey Keef, while on the subject of 80's English pretty boy bands, How about Supertramp? Can we have kippers??? for breakfast, mummy dear, mummy dear. How about a trad. kipper meal?

      We have kippers every weekend (with bread and butter and grilled tomato), but I'm not sure what a trad kipper meal would involve...

    I like your joke Keef but you’re leaving us in the north east out by saying you can only eat dumplings with beef stew… what about mince and dumplings?!? Lol

      In Doncaster where I grew up, chippies would have cod, haddock (most expensive) and coley (cheapest). Here in Leeds it's generally all about cod.

    I have a professional tip for you.
    It also comes with a promise: anyone who follows this tip will change their lives. Yep.
    However, confession first - this is not mine. I've heard of it from an extremely good chef (who I consider the best in the world) by the name of Greg Easter.
    On to the tip then...
    Replace all of your ale recipes with Doppelbock (which is still ale). It has a higher ABV but what makes it unique is that it will never get bitter regardless of heat or cooking time.
    My favourite is - Paulaner Salvator but there are other excellent choices such as: Ayinger Celebrator, Weihenstephaner Korbinian, Spaten Optimator and others.

      So is Doppelbock like bock beer but doubled? I've had bock before, but never seen it on sale in the UK.

      @@Keefcooks I believe so but I'm not going to presume to know or understand why it doesn't turn bitter like other beers.
      Funny you should say you've never seen in it in the UK because I live in England too ha ha =]

    Best dumpling recipe. Half flour and half breadcrumbs. Suet. Beaten egg and milk. And mix. Dont forget self raising flour and baking powder. Best done in slow cooker Dumpings turn out light and fluffy.

      @@Keefcooks Dumpling stew is my favourite dish. Dumplings is a Jamie oliver recipe. Breadcrumbs makes dumping lighter in texture. You like dumpling with crisp top. This can be done in oven for a few mins.

    Stew for me starts with pearl barely and lentils 24 hrs before to soak. Two cans of baked beans at the end mmmmmmm

    Nom Nom! I have to try crunchy dumplings, Thanks¯Ive never had beef stew without mushrooms but suppose the ale will direct that for flavour. I think perhaps they still might work.

    I always love to see Mrs KeefCooks taste testing and honest opinions, what a nice beef stew Keef, and those dumplings look delicious, I always put my dumplings in the pan with the stew, but I will be sure to give the oven method a go and Thank you, for this amazing recipe :-))

    Thanks Keef! Another good one, good old hearty British comfort food. Unfortunately, I cannot get suet or even the kidneys with the fat. I am going to give this a try using what is available here (either butter, which is very different from British butter, or Vegetable shortening.) I thought about putting this fat in the freezer then grating it into the flour. (Which is another shortage - no self raising, so I am using baking powder with all purpose flour instead) See how it goes. It is years since I had dumplings, I had forgotten about them until you brought them up! It now has me thinking about that other favourite we had when I was a kid at school - Minced beef and mashed potato with a CHEESE SCONE! These old fashioned recipes take some motivation to put together here, they don't feel quite the same when it is 42 C rather than a cold English Winter evening.

      I've used frozen grated butter as a substitute - toss the shreds in flour to keep them separate - it kind of works.

    I have to say I love the camera work here Keef. Lovely lighting and great angles! what camera are you using? The beef stew looks epic too mate

      Thanks Adam. My main camera is a Panasonic Lumix GH4, and the B camera is a Lumix GX400. I didn't do anything different with the lighting, but I was thinking a bit more about the little incidental shots like the slo-mo kettle/stock, crushing the peppercorns. And the Magic Knife, of course.

    If you want to give porter stew a second chance, maybe add some heavy cream in the end of cooking? It really mellows it out, and turns everything into a creamy goodness. Problably won't work with the dumplings, but still. :D

    I once tried a Beef Stew Recipe that included yer actual Guinness and, like you, I also found that it didn't work. But, luckily for me here in Spain, I can get a box of Suet (an hour's round trip by car) so a beef stew not unlike yours is often on my table.

      Why do you want a substitute?
      Are you teetotal?
      If so, don't worry, the alcohol evaporates during the cooking process.
      If you can't find Abbot Ale where you live, any decent imported ale will suffice.
      But as Keef says: Lager? Forget it.

    porter is nice if you add sugar , and put it right on to the fried beef and cook it down first with sugar added as it boils , it can be honey , more traditional obviously

    I tried this today. I'm young and well I don't know how to cook many things. This stew was so good that my whole family thought I didn't cook it. Thank you for making these videos, my go to place for cooking. Simple normal food without all that fussy chef stuff that nobody understands.
