This is a great guide on how to use a gate, but I shifted across to using Reaper's Auto Trim/Split feature. That automatically does the thing you mentioned of cutting out anything below the threshold, and it automatically applies fades. Where I like it over a gate is it gives you separate little clips you can shift around to fine tune pauses and timing. And you can manually adjust the start and end points of the clips so you can get them exactly right. It sounds fiddly, but I do it in real time as I edit so it's pretty seamless with practice.
