    One detail near the end that got me was Franco presenting a pizza conceptualized by his son. That is where you realize that to him, his family is so important that he wants to show them to his closest clients. The video starts with him saying the entire idea of hanging out and cooking for his friends was his dad's, and finishes it with a dish developed by his son.
    Here you see, in very simple and subtle detail, that if you are in Authentica, you are at his home.

      @@Mr_Helios76 I'm french, I love eating good food, and I was honored to explore the specificities of Italian cuisine thanks to an elderly couple of friends from Napoli, I used to enjoy looking at la mamma cooking and I was stunned by the way she was making food for her family with love and commitment, I learned so many things about Italian cuisine, the agriculture, the products, the techniques. Italian gastronomy has all my respect

    I went to Pepe in Grani last week for dinner. Restaurant was incredibly full and still they managed to serve the best pizzas I’ve tasted. Their tasting menu is incredible and all ingredients are superb. If anyone happens to be in the south of Italy, it’s worth going the 1h drive from Naples only for the pizza experience.

    Was there 3 years ago, and completely randomly(we thought) we were given the chefs table (only 2 table on his terrace). This was the best restaurant experience of my life as alex described, but the most frustrating also. Franco was checking on us every 5 min, but couldn't speak English. As a big pizza enthusiast myself, I had tons of questions about his dough, but couldn't ask one. Promised myself to learn Italian before going back. Oh and why the special table? Because a famous Italian actor(from the TV show Gomorrah) was also coming on this terrace, and they thought French people like us wouldn't recognize them. This was a magical moment.
    My whole 2 weeks naple vacation were organized around this booking, from visiting his Mozarella supplier to tomato productions, and it was so worth it.

      Hey! I'm currently in Napoli after yesterday's night dinner and today's lunch at pepe in grani. We flew from France just to eat there, for the second time. We had to come back! We were beautifully received and the food was simply amazing. Every ingredient is a star on the pizza and you can feel all the research and technique behind every dish. Franco was checking on us all the time and was really concerned about us having a good time at his place. Same as you, as a neapolitan pizza enthusiast I had a ton of question about everything I wanted to ask him but I was not able to because of my level in Italian. Beside that, every thing was magical. He showed us the kitchen, told us about the different kind of tomatoes that are used in "La ritrovata",... It really was our best restaurant experience ever. You can feel the passion he puts in what he does. Definitely coming back in the future, with some Italian speaking skills! Thank you Franco

      I was a month ago in Caserta and near Caiaccio in the hills ( wedding postponed from late spring to early autumn, and we had no extra vacation days left ). Sadly I could not organise the visit to C&P.

    I’ve watched your entire catalog and I thought I was going to dislike this. I thought from the title alone that watching this would make me unsubscribe. It made me cry.
    I worked in restaurant kitchens for about 7 years while going to school. The techniques you pick up and the love of food, working with food, selecting food, making food, pleasing people, working with a close team - above all the joy food has to make a bond between people - once you feel that, the desire for more of it never leaves. At least, I thought it never left.
    My fiancé died two years ago and my little world was destroyed. There has been little happiness in my life since then. Cooking for yourself, there can be some joys there, but nothing like the joy of knowing what someone likes, exactly how they like it, and making it that perfect way that makes them so happy.
    I used to host restaurant nights for friends, one or two people at a time, and cook course after course of a menu made especially and uniquely for their tastes, that night. You can begin to imagine how I connected with this video. I’m no Franco Pepe, but I do know the joy and passion you can see in his eyes serving you.
    That’s the joy of restaurant work - the joy of serving someone. If you enjoy serving people, if you enjoy finding out exactly how someone likes things, anticipating their desires, thinking of what they like before they even know they like it or want it, there are not many things that beat the immediate feedback of serving someone food.
    I cried because I remembered how happy I was serving people and remembered there’s joy to be had there that I need to return to. There’s joy in serving the anonymous customer you never met, and from small cues delivering exactly what they want. There’s immense joy in serving people you know intimately with exactly what they want, and still being able to surprise them with how well you know to please them.
    You can imagine the flood of memories and realizations that made me cry watching this as I remembered cooking for her, as I realized I missed restaurant nights for friends, and as I realized I was _your_ anonymous guest whose needs you anticipated perfectly with this film.
    Thanks Alex, it was delicious.

    Alex, Thank you for reminding me how good food is in Italy. I lived in Castigilone Fiorentino for five months and traveled mostly Northern Italy. Taking pictures, sketching, eating, and drinking wine the whole time I was there. It was the best five months of my entire life. The food, the people, the art, the history.     I have been making pizzas as a learning process, so I can open my own business for over a year now. Then...I saw this video and I went "bonkers". My mother is from Caserta,... and to think the greatest Maestro is from that region.
    Alex,...I love your channel. I work at creating wonderful works of art that taste as pleasant as they look...and I desire to be a great pizzaiolo. Now, I want to put a photo of Franco Pepe on my wall as motivation and dedication to the "King of Pizza".

    Being a chef myself, i can't even imagine what a great experience that most have been!!!
    The "pizza's" he served, looked amazing, and the flavour combinations are simple but you just know they work.
    Italian cuisine's descendants of the "Cucina povera" is something really beautiful, simple ingredients that can become a great dish, if you know how to use them.

      Indeed. This is my favourite part of Italian cuisine. I'm still working on Cacio et Pepe.... two bloody ingredients (three if you count black peppercorns, which you usually don't, but here it's such an integral part of the dish) and it turns out completely divine without lacking anything when done right.

      @@goffe2282 I made Spaghetti San Gennaro the other day and I used quite a few more anchovies than the recipe calls for and the magic didn't happen ... sometimes, less is more. It's such a simple dish, but to make it really well you have to respect the fact that it was a poor person's dish and adding too much spoils it.

      That's what I like about Italian cuisine, it's simple and it's all about the quality of the ingredients and a few simple to learn/hard to master techniques. That's why going to an italian restaurant can result from terrible to simply amazing depending on if the chef is taking shortcuts or not. You can't lie with Italian cuisine.

      @@Zarzar22 Indeed. Though I believe pineapple in ham go well together, what I don't like about Hawaiian pizza is I don't think pineapple and tomato go together. Both are acidic ingredients and throws the pizza off balance. It looked like Pepe omitted tomato as far as I could tell.

    4:57 That little splash of olive oil in slow motion is absolutely magical.
    Have to edit: The entire freaking video is magical.
    I've never left my part of the U.S. in my entire life and videos like these are my way of escaping and seeing the world. I would try every single item if I had the means to.

      The guy is a brilliant cook, making affordable food. He was making the best videos long before he was shooting high frame rate, 4k, cinema. I really hope he can get back to that.

      To me, that combination has been vindicated for about 10 years now, ever since I saw the late great Anthony Bourdain in the Rome episode of The Layover. In that episode he challenged a pizzaiolo to make him a Hawaiian pizza. His comment? "That should not have been good." But he admitted it was.

    Hey Alex!
    When I was watching the video, the part where I first saw the dough, it was just pure awe. I've never seen a dough look that... pudding-like, only in one dish, so I got suspicious. So shiny and soft, but it holds together. And when Franco put it in the oil to fry, and basically made something that my experience would describe as Lángos Pizza, my suspicion was confirmed, and my experimental brain lit up.
    I will definitely try making a Pizza from traditional Hungarian Lángos dough. This is too interesting not to try.

    As long as you keep making videos Alex, I will always watch. The production to your videos is always great. The passion you have for food, to me, is a mix of Anthony Bourdain meets Alton Brown. And they are the reason why I learned to cook myself. I'm not on that level, but it helped me learn the basics to cook for myself and my friends.

    First, Alex, I love your videos. They transport and immerse the viewer as if we are there with you. As an Italian, I've been a purist. Pizza Margherita, sauce, cheese, fresh basil, and that charred crust, the holy grail. Yet my mind is open. Fried basil, brilliant. But pineapple on pizza, blasphemy... until this video. This man is a genius.

    Is it worth travelling "all the way" from Paris to Naples? As an Australian, this makes me laugh! But I agree Alex. As someone who also loves food and has travelled around the world to experience different cuisines, it is always, always worth the travel.

    Anyways, it looks incredibly good. And not just in a "I really, REALLY want some of that." But in a "time to get into the kitchen and prepare the dough" way. Inspiring. Is it all the same dough though?

    Fun fact: once or twice a year I drive to my parents' house for vacation. The driving time is a little over an hour longer than driving from Paris to Naples (over the course of 2 days). I bet your drive would have been more pleasant too
