How to Make and Meal Prep Fathead Pizza (Low-Carb/Keto/Gluten free)

  • Fathead pizza is something that I eat almost daily (seriously, it's that good). In this episode, I show you how to make and meal prep this low-carb/keto recipe so that you can eat it 6 times before needing to make more!

    INGREDIENTS:
    - 6 oz cream cheese
    - 510g shredded mozzarella cheese
    - 255g almond flour
    - 3 eggs
    - 1.5 tsp kosher salt
    - Whatever toppings you want
    DIRECTIONS
    - Preheat the oven to 425°F / 220°C
    - Crack the eggs, add the salt, and scramble
    - Add the eggs to the almond flour and mix
    - Melt the cream cheese and the mozzarella cheese in a pan over medium heat or the microwave. If using a pan, constantly stir so that it does not burn. If using the microwave, heat for 30 second intervals, mix, and repeat.
    - When the cheese is melted, turn off the heat and mix in the almond flour. Mix until it is well combined. If the cheese gets too stiff, put the pan on low, or microwave for 15 seconds - you want to avoid cooking the eggs.
    - Once the dough is well mixed, cut into as many pizzas as you want. Grab a piece and lay it on a piece of parchment paper. Cover the dough with another piece of parchment paper, then shape the dough to your desired shape and thickness.
    - Remove the top parchment paper and using a fork, poke the dough liberally to make holes throughout. This prevents the dough from creating a cheese balloon as it bakes.
    - Place the dough with the parchment paper onto a baking sheet and into the oven for 12 minutes.
    - While you parkbake the dough, prepare your toppings.
    - When the timer is up, remove the dough from the oven. Set it on a heat-safe surface or pad and add your toppings (I'm a fan of sour cream, black pepper, and cheese).
    - Place the pizza back into the over for another 12 minutes.
    - Once the timer is up, remove, and enjoy!

    I decided to give this a shot tonight and it was a hit, even those that aren't gluten free in my house. I was a bit leary after trying the pretzel dog recipe and failing, but that must have been operator error. Thanks for the recipe!

    I've been making excellent fathead dough ahead of time and freezing it in small portions so I can make a recipe anytime I like. I learned that you don't really need cream cheese in the recipe, especially if you're looking for a more substantial dough. So I eliminate the cream cheese. I found that it actually tastes better without it. I tried using sour cream once an it was really tasty and nice, but I have worked with this dough until I've eliminated everything it doesn't need in order to save money on groceries that are getting as high as a kite in price these days.

    I have made this only once before seeing this, and it turned out, well, awesome! Nice trick to use sour cream as a base for the spicy pepperoni. I have also made pizzas without a crust, only chopped leftover chicken and mozza, with other interesting bits. May have to lay up a store of fathead crusts in the freezer for lazy weeknight (and guilt-free) meals.

    Trying to find yummy but low carb/keto recipes, not just for me, but for my fella. Hes borderline diabetic and well, could use some help. I understand old habits are hard to break, but with the right recipes, it can be done! My 1st keto experience, I lost a significant amount of weight in a short amount of time...I truly believe folks get "addicted " to carbs, especially simple carbs, and processed foods...the American diet has changed drastically for the worst over the last several decades, and the proof shows...the human body isn't made to carry a bunch of extra weight..and you'll pay the consequences for being overweight...I know I did..I was just miserable! (High blood pressure, depression, anxiety, joints and body aches, sluggish feeling all the time, low sex drive..)..thanks for the video/recipe!

      You can most definitely get addicted to carbs - there's a certain combo of sugar and salt that's known to be super addicting. And yeah, the overweight stuff - you really start to feel it ^_^;

    Oh, yum! Very tasty. My oven must run hotter than yours so the first one got a bit ……… blackish. But, onward and upward (or downwards when it came to temperature) and the next one was great. Topped with some Raos pizza sauce, pepperoni, bacon and a hint of onion. A bit more cheese and it was really good. Now, in addition to making your tortillas for my Dennis, I must add pizza too. Do I dare try another of your recipes?

      @@BlackTieKitchen its not really about whats in it, but rather the technique. Which I do believe I've mastered if I do say so myself. Less mess, only 1 bowl and rubber spatula needed for the dough, no hand kneeding... And now I am getting hungry and will have to make some tonight 😅🍕

    I love the idea of batch prepping a bunch of pizza crusts! If you freeze them, do you thaw one before prebaking it, or do you just increase the time?

      I just remove them from the freezer while the oven preheats. Theyre so thin that they defrost and cook quickly!

    Is it worth trying to mix it with the dough hook in the stand mixer? I suppose so, especially if you're feeding many mouths.

      I never tried, but im going to guess that no, it's not worth it. As soon as the cheese begins to cool, the dough becomes difficult to deal with. BUT, I haven't tried it, so I could be dead wrong!

    Have you tried the microwave method for making fathead? It's a lot easier than the stovetop.

      I have, but... I dont have a microwave 😂. I will say though, if you're meal prepping it, or making a lot, I find it's easier on the stovetop. That much cheese in the microwave turns into fine line of "its melting, aaaand now it's burnt.'

      Desde Perú! En que area/ciudadu? Unfortunately you cant substitute coconut flour one to one - it's an absolute moisture sponge and will yield a very dry bread. I havent tried storing the pie cooked, but my guess would be that it would reheat very dry. What you *could* do is parbake the crust and save that.

    My dough came out kind of soft and sticky. The parchment paper was sticking to it. I followed the measurements exactly. What could have gone wrong?

      Was this before cooking? fat head dough is naturally somewhat sticky due to all the cheese in it. It's one of the reasons I've moved away from it. It's also possible that moisture levels in the cheese are slightly different and the cheese you used has a higher amount

      I just parbake it straight from the freezer. Theyre so thin that they defrost super quick

      Fathead cooks really quickly - doing that would lead to the crust burning but the toppings not getting to the cooked state in which you want them! (At least, that's what happened in my experimentation 😂)

      @@BlackTieKitchen Oh no! 🙈 Was trying to figure out a way to have the full pizza assembled for freezing and cooking. If full assemble isn't feasible, may include kits with frozen sauce and toppings for each crust.

      You can definitely assemble them - you just dont need to parbake them first (in my experience)

    I'm intrigued .... why sour cream? I know because it's you that it's some genius foodie hack not known to the little people (aka people who own microwaves). I'm also curious ... yes fathead is Keto but still not something most people can eat everyday ... how do you stay so fit while eating this every day? More power to you.

      Believe it or not, tomatoes tend to give me heartburn for some reason and Im simply not that big a fan. Im a huge fan of white pizza and sour cream is close to it without any extra work 😂
      I used to workout a lot - but my schedule now is super hectic so I dont get as much time anymore, womp womp 😔

      Grams is the best way to go - Low carb/keto cooking requires precision, to the point where 1g can make a large difference. Thus, I recommend you buy a $10 food scale as it will pay dividends wherever you get recipes. Also, maybe if you asked nicely, thatd help too.

    Questions: What flour can be used besides the dreaded allergic almond flour? How about enough doe to make a normal size 18 inch with a normal real Italian thickness pizza. Not thick but real pizzeria style. Being from upstate NY we know what real pizza is. As well as NYC does.

      If youre looking to make a low carb pizza, there arent many options. Oat flour, coconut flour, and lupin flours are your best bet, but they have properties that make them less than ideal. I clean my oven as soon as burnt bits appear. Let me check out the video? I know I can unscrew the glass.... Just have to work that one out.

      @@BlackTieKitchen Oh, I saw something like a patty with this type of dough. I`m not sure if `patty` is the right word. It is a little circle-shaped piece of dough - you put the filling on one of the sides and cover it with the empty side and then just press the sides. So it is a kinda moon shape pastry. Also can be stored in the fridge :)

      Thats what I would call an empanada, or when they use pastry dough- it's a turnover. I long for eating good empanadas again (i grew up eating them all the time!)

      Why is it crazy? It's more cost effective than using a bunch of bags - and you need to use the parchment paper to bake it, regardless.
