    Looks good. Had a dozen of these from a bakery freshly made in France. Same shape same size. Thing is they call it a different name, and they don't know what pate chaud is when I mentioned it. Le Cuisinier however offered gateaux de viande, which is in fact, the recipe for pate chaud.
    Edit : Le Cuisinier mentioned that he only makes them on Saturdays as he only gets the meat on Fridays. I purchased the entire batch. 30 of them to be exact.

    Ty Deana! You made it look so easy that now I will attempt my own version based off of your recipe with slight modifications. I will substitute the pork pâté with mushroom pâté in order to eliminate the gameiness that I wouldn't want for this pastry. Also I will make the pastry cylindrical-shaped much like a moon cake because the ones that I first ever had were made that way.
    I cannot get these in the area where I am from. Now I can eat freshly homemade bánh pa tê sô (chaud)!

    Hello Deana, i saw you have some little steel dishes next to the dough in the air frye. Do you put some water in it to add moisture, or just to keep the dough in place? Thanks.

      No it was to hold down the parchment paper so it didn't fly up and catch on fire.

      I buy them at Lion's or Ranch 99 markets. They carry Chinese and Vietnamese ingredients.

    this is weird recipe; I never see mushrooms or shrimp in patechaud.

    These look a lot like Haitian patés. They're probably based on the same French pies. We eat those with Haitian hot chocolate.

    Your recipe is difficult and not authentic because you use too many ingredients. Oyster sauce doesn’t go with pate. This is more like a Chinese not French pastry

      It's a Vietnamese dish that has French influence. The French occupied Vietnam for 6 decades. It's not French.

      Just little ceramic dishes to hold the the paper down.

    I also reuse my sriracha bottles!!! It makes the best sesame oil bottle. 🤌🏻
