    season your meat first and leave it to marinade overnight. taste the difference after cooking. its a whole new flavor. seasoning meat while you cook it give a rank taste.

      My curry is never rank lol. Everyone does it a different way. As long as you have fresh meat/fresh ingredients you’re good to go. Thank you for sharing your method.

    Nice, can I use green mango, tomato, ochro and coconut milk instead of water ? Thanks.

    • @matthewsguyanesecooking4601
      @matthewsguyanesecooking4601  6 ปีที่แล้ว

      Rakesh Persaud Of course! But you may want to mix the water and coconut milk. And add the coconut milk towards the end so that it doesnt curdle.

      We usually put the green mango but sadly we didnt have any. Sometimes we will add tamarind to give it a sourness too, but we didnt have it either.

    Hi Matt, I’m used to cooking with Masala and curry powder. I’m wondering why the Trinis use curry powder only. Can you elaborate? Which is the best way? Thanks. 😁

      Hi there. I am not sure why usually they only use curry powder. I know sometimes they use masala, but not all of the time.

    Frying hassa 😏😏i have never seen that b 4 but washing it with salt and lime then wash off with warm water is what ppl does even me ....when you fry and curry it your are over cooking it and i put coconut milk in side

    • @matthewsguyanesecooking4601
      @matthewsguyanesecooking4601  6 ปีที่แล้ว +5

      Frying it is a must to get out the rankness. Give that method a try and you'll never go back. It doesn't overcook the hassa bc we dont leave the hassa to cook in the curry for too long. We add coconut milk only sometimes.

      @@matthewsguyanesecooking4601 frying is a.must for you ....id do it when i wash it with lime and salt and pour warm water all the rankness does come off it even get the same white colour when the warm water is poured on to it .....anyways that extra onion that you guys fry i always does that 👍👍
