My Perfect Keto Bun (Pandesal) Recipe

  • You on a keto diet but craving for some comfort food? Here it is! My Keto Bun or Pandesal. I've tried other recipes and made mistakes. I don't want you to make them too, so hear out my tips in the video.
    KETO Bun (Pandesal) Recipe:
    160g Almond Flour (approx 1 and 1/4 cup)
    25g Psyllium Husk* (approx 7 and 1/2 Tbsp)
    110g Egg White (approx 4 med size eggs)
    15g Apr Cider Vinegar
    2 Tbsp Baking Powder
    1 tsp salt
    1 cup boiling water
    1 tsp liquid Stevia ( optional, if you want your bun to be sweet)
    A. Mix all dry ingredients
    B. Add egg white and vinegar and mix well
    C. Pour boiling water and mix until texture becomes gooey or Clay-do like. Let it still for 10 minutes.
    D. Divide into six equal portions and shape in to burger buns.
    E. Brush top with egg yolk and sprinkle with Sesame seeds
    F. Bake in the oven (180deg C) for 40 mins
    That's it!

    Adie, I tried the recipe many times... it's almost perfect. BUT... the inside tastes raw and I could taste the vinegar. I baked it so long to resolve that.
    Your thoughts? Do you have a recipe with yeast?

    I tried this twice. 6 pieces was not enough for the family. I baked another batch this morning, doubling the recipe, so now I have some left for merienda. Thank you for the recipe 😊

    I used a dab of honey instead of stevia, and cornmeal as toppings instead of sesame seeds. Perfect gluten free Pandesal ! Thank you for sharing.

    Hello, 25 g of Physillium Husk is about 2 tbsp which is a big difference from 7 1/2 tbsp from your estimate.

    You said the psyllium husk is very important but it was not clear how much water to add for the psyllium to "bloom."
    I also think it is better to let the psyllium to "bloom" separately from rest of the ingredients just like how you let the yeast bloom first before adding it to pandesal dry ingredients.

    Kindly CHANGE your description info for psyllium husk. 25g is 2 tbsp (tablespoons). Many following your written recipe will definitely not have the correct outcome bcoz they placed 7.5 tbsp instead of just 2 tbsp.
    If you were to check exact measurements you will find 25g WHOLE psyllium husks is about 3 tbsp, but I’m guessing you used POWDERED (more refined which happens when its ground further in a coffee grinder). Since powdered psyllium husk is less dense/more fine, 2 tbsp should be correct.

    Is the measurement of baking powder in tablespoon or teaspoon? I followed exact measurements in grams but I found it too salty. I tried decreasing the salt by 1/2 on my second try, but there was a bitter aftertaste. Could it be because of the baking powder(2Tablespoons)?

      I've tried this recipe using 2 tbsp of baking powder.....and yes, it left a bitter after taste but, apart from that...the texture and size and taste over all was better than any keto pandesal recipe that I've tried .....
      I will use tsp next time.....

      I just tried this recipe today and I also tasted the salty/bitter aftertaste. Its pretty strong when you eat it plain, but with butter or cream cheese its okay. Did the buns still rise after you cut baking powder to less than half?

    I am so interested to try this recipe but i dont have a weighing scale as of yet. Can u please convert the measurements to cups and spoon of those you measured in grams? (except the psyllum husk) And btw ano po ung brand ng psyllum ang ginamit nyo? Salamat po!

    I have tried this recipe. It's yummy. Just few questions. 1. How many grams if i am going to replace almond flour to coconut flour? 2. Is it normal na basa po yung loob right after baking? Ang ginawa ko pina rest ko muna inside oven for about 20 mins then ok na. 3. Im planning to make ube cheese bread with this recipe, magmmatter po ba kung mag aadd ako ng ube flavoring? Sorry kung medyo marami but I appreciate the answer. 😊 I tried making keto breads and pita using coconut flour but it's hard for me to really like the taste and smell. Nalalasahan at naaamoy ko yung nyog which is hindi ko gusto. Gusto kong gustuhin si coconut flour kasi affordable unlike almond flour. Any tips for this? Like para mawala yung amoy and coconutty taste. Thank you. 😊

      Yes. If newly baked you can leave it on room temp. Wrap it with a bread cloth para di mag moist. Nireref ko din siya after. Then iniinit ko pag gusto ko ng bread.

      Available naman siya sa grocery or botika. Walang substitute kase siya yung magbabind at magpapaalsa. 1 box around 100 pesos 5 sachets na yun po.

      You have to use the weighing scale to be exact, iba iba kasi ang kalalabasan if you use measuring spoon. Pero I think 5gms Yung isang envelop ng psyllium

      Did you follow the right temperature? It needs to be a temp controlled oven. There are some who just use oven toaster where you can't check the actual temp.
      Also did you follow the exact measurements?

      masyadong densed yung coconut flour pero may ibang recipe ako nakita using coconut flour but I havent tried it.havent tried.replacing psyllium husk w xantham gum

      How many minutes po ang baking niyo? You may try adjusting the baking time to less. Minsan po kase nag va-vary sa heat circulation ng mga ovens. Dati naman yung sakin undercooked when I followed yung original. recipe

      Pina rest mo ba muna ng 10mins bago mo iform into balls at i bake? Na pre heat mo ba oven ?or di kaya pinalamig mo muna konti bago mo hatiin pagkaluto.kahit ordinary pandesal moist sa loob pag bagong labas sa oven

      Yes actually you can. Actually mas masarap. Just use 1/3 measure compared to that of almond flour in this recipe.

      hi, keto or "ketogenic diet is a high-fat, adequate-protein, low-carbohydrate diet ". it's a no sugar, pasta, breads, rice and even fruits. But I was able to lose 27lbs and 3inches in just 30days. I will post a vlog aboit it soon.

      mas mura ang coco flour and yes matakaw sa water. any recipe na may almond flour and tiu substitute it w coconut flour, you have to.cut the flour to almost 1/4 (1cup almon flour is 1/4 coconut flour)

      I dibbt have to brush it with egg. I.just sprinkled the sesame seeds and.nuts before putting them in the oven

      I've had several fails when the inside were still wet and seemingly uncooked. But I've perfected it. It's dry, cakey, fluffy, and ohh so good. ❤️
