How to Make a Gin Fizz

For this week's cocktail we'll be going over a frothy, fizzy version of a lemonade that dates back to 1876: the Gin Fizz!
2 oz (60 ml) Gin
1 oz (30 ml) Lemon Juice
0.75 oz (22.5 ml) Simple Syrup
1 Egg White
Club soda, to top
Garnish: Lemon Wheel (Optional)
Add the gin, lemon juice, simple syrup and egg white to a shaker and vigorously dry-shake (without ice) for about 15 seconds.
Add 3 or 4 ice cubes and shake vigorously until well-chilled.
Double-strain into a chilled Collins glass and top with club soda. Garnish with lemon wheel.

eggyolks are very common in a Dutch drink called advocaat ( lawyer) it consists of fresh eggyolks and a clear brandy in Dutch we called it brandewijn
