for example, the amalgamates (undertale spoilers)
they were fallen down monsters, "came back" with determination but they melted, causing them to melt together, making them basically immortal
another example is undyne the undying in the genocide route, when you beat her she starts melting because she is determined until she turns to dust and you win the battle

For Undyne, the reason sans laughs is because its a coping mechanism that monsters use for pain such a in the no mercy run, torial laughs as she turns to dust, sans laughs when he finds paps is scarf, and even you laugh as you slowly fade out and turn to dust and even chara, the first human laughs away the pain with them amd asrial accidentally poison asgor, so that is the reason sasns laughs as he found paps is scarf
