Many of u are complaining about newspaper for dum but that's what bawarchis use for dum in hotels n functions as it's cheap and efficient...since it's Bawarchi series I try not to interfere with their way of cooking so that u could get 100% original recipe....it was not my choice to use newspaper......and it is not recommended to use it either. And about not washing rice, bawarchis don't wash rice since it changes the texture of rice after cooking.... during the shoot of Tahari I had washed rice seeing that Bawarchi got angry he said this will change the texture of rice...it won't be like hotel one.....that's why here it wasn't washed.....but from my opinion it's better to wash it.

Surprising......we hire cooks/chefs/or bavarchis.....it is not acceptable his nonsense/fancies....using newspaper, food colour, not washing rice and so on..... ultimately we will pay him for his services.

It's good that you didn't caption this Biryani as ' Hyderabadi Mutton biryani'. The crux of the issue is Hyderabad has been 'invaded' by people from Districts/villages or other states. Hence there has to be a ' contamination' of culture and so does its cuisine!
A perfect biryani for events such as weddings of the people of real Hyderabad used to be led by Thoroughly experienced Hyderabadi Bawarchis and their trained 'Shagirds' and they are known as 'Ustaads'.
Back in days being myself a food critic and a food connoisseur, I was amazed and impressed to witness a biryani making preparation process for 500 guests and the Ustaad was to double check the salt and the doneness of the biryani, what he did was slightly open up the lid of the 'Degh' and took the steam in his cupping hand and smelt the steam and ordered his crew to add more salt and prolong the process for another 15 minutes or so! These are the real Bawarchis of the Erstwhile 'Hyderabad, it's pure culture, tradition and class!!
I hope, in this 21st century of Hyderabad (which has become 'Hyddddrabad') few Hyderabadi families still demand and find out those ' senior Bawarchis services for their events to conserve and upkeep the great tradition of Hyderabad and its culture!
