    Hi Amy, thank you for demonstrating the 8qt commercial! I was wondering how do you feel about this kitchenaid 8qt commercial now? I plan to purchase it but didn’t see many reviews on this model. If you could let me know your thought on this model after 4 years of usage, that would be awesome!! Truly appreciate it!

    I also bought an 8qt mixer myself about 4 years ago. I love it. It mixes whole bread so well and doesn't labor.

      @Jodi Rauth, thank you for answering! Truly appreciate. Last question. Have you ever made small size of dough with this 8 qt? Some of the mixers can’t do well with a smaller size of ingredients. I know 8 qt is made for big mixing jobs but sometimes....I make 500g of dough and my tilt head mixer can’t handle it.......

      @@peiwenchen2600there is a screw under the head that adjusts the height of the beaters , which makes mixing small batches possible. Otherwise I have a hand whip or a small electric kitchen aid hand mixer. They about 49 dollars US. I also have an ultra ninja for pulverizing some types of ingredients or grinding spices or small batches of whole grains. I have had my electric hand mixer for over 10 years and never any trouble with it in making whipped cream or batters or frostings. As for the Ninja I could cook with out it. It pulverized raspberries seeds to nothing. You even make raspberry smoothies for small children with no risk of seeds

    Most electric motors have load sensors so its not pulling full wattage at all times. 1.3hp motor will break your arm if it got stuck in there. It only slows until load sensor amps up current to over come resistance! haha.. I liked your video Sunshine!

    I don't have a kitchenaid (hopefully one day) I've a kenwood chef which struggles & moves around with large batches, so I recently bought a Bosch universal, it's fantastic for bread & large batches of cookies (which I freeze) however I've so many attachments for my kenwood & used it just about everyday, I now understand your love of mixers, & all there uses..😀

      Hi there. Which Kenwood do you have? I was thinking of getting the 7 quart Titanium. I love the stainless steel tools. Trouble is, there isn't any real support for Kenwood here in Canada. They're no longer sold in shops. Everybody buys KA. So, if a Kenwood were to break, I would have a hard time getting it serviced. Still, I'm very interested in their Titanium line. Hope you're happy with your mixer.

    Good review, and you make a lot of sense. Your basic sandwich bread recipe seems like it would be a good one for me to try. As or the mixer: I like the idea that you have several, and I am contemplating adding yet another one to my collection. They are fun toys, and they really do help encourage the practice of home baking. And indeed, home baking is far better than the processed junk food such as the Little Debbie cakes and brownies!

      Well, I ordered the KitchenAid Commercial 8 quart with the safety cage, in Empire Red. But it had a scratch in it. And besides, the cage didn't serve much of a purpose for me. So I'm getting the one you reviewed here instead. It'll join my Cobalt Blue Pro 5 Plus. And after that, I plan on adding a KitchenAid Mini to my herd, which looks like it'll be GREAT for waffles and other little goodies. I aim to make quite a few tuna sandwiches with the 8 quart! :D

    I wouldn't be too concerned about the hesitation. I take these apart and fix them and you know, there's circuit boards and speed sensors, and load controls in this unit. It is designed to sense when it is being overloaded, and compensate for that, to protect the motor or anything that might get in the way of the motor like a wooden spoon or a person.
    So that hesitation is a good thing, the unit is designed to make loaf after loaf of bread in a comnercial setting, you're not going to break it making 4 loaves. Another thing you should compare is the heat of the back butt of the mixer after ten minutes of kneading. The 600 heats up, the 7 quart and 8 quart don't. But keep in mind these are solid state motors, no brushes, direct drive with just a worm gear between the motor output and the bread.
    One other thing, if you raise the speed over 2 all bets are off.
    The kitchenaid is designed to knead dough up to speed number two. When you switch to 3 it changes to a more free wheeling spin and you will roach out the motor in no time. These people that complain about broken plastic gears and hot smells coming from the motor are overloading it. The plastic gear breaks when its overloaded, to protect the motor.
    7 dollars versus buy a new mixer.
    Side note; looked like a REALLY stiff dough you made there.
    You should do an 8 loaf batch and try to break it. Ill bet you can't.

      I have the Pro 600 and when kneading plain white bread (5 to 6 cups flour) for 10 minutes on speed 2, it does seem to labor alot and I can smell the motor. It has even done a thermal shutdown another time. Is this normal? I love the Pro 600 for everything but a bit disappointed in its bread making capabilities

    • @cnnw3929
      @cnnw3929 5 ปีที่แล้ว +2

      I used to have a Professional 5 Plus. It now belongs to my biological father. That little mixer is as strong as an ox, and has even improved since I replaced the plastic gear case, which was still good, with a metal one. You really want to knead on Speed 2, and no higher. And you can run that dough for 5 minutes or longer, if you have to. My Commercial 8 hesitated on one batch, but then that dough was so tough it was impossible to manipulate it by hand. So at this point, I just add flour just until the mixer cleans the bowl, and run it for another couple minutes. I have never had a problem since. These machines are cheap to fix, and cheap to buy accessories for. I would recommend a KitchenAid over anything else, for someone who can only afford one mixer and who has a small budget.

      I've got a professional 5plus and I've Only been able to get it to speed 1 before the motor stars wheezing and I can smell it. The dough hook is useless so I use the scraper thing and I only mix the dough until it's assembled. I knead it by hand. The larger commercial unit might be better, but I'm not impressed with the K.A for bread. With cookie dough it work just fine. With bread it struggles just with regular white sandwich dough.

      COH Hospitality: I think Amy mentioned on one post that the mixer featured on this video will run for a few seconds, and then stop. I'm thinking it may be a speed control issue, just like you said here. Noreen's Kitchen also had the same problem with hers, brand new out of the box. I think you're on to something, and the problem is probably fixable if the machine is out of warranty. I would like Amy to chime in. There aren't many choices in mixers for a home cook, unless they are willing to spend a couple thousand dollars on a commercial machine. If more is known about how to diagnose and repair a KitchenAid Pro Line 7 or Commercial 8, a lot of owners will be happy campers with restored confidence!

      nope, its just because kitchenaid made these days sucks.

    • @mijalakis3
      @mijalakis3 4 ปีที่แล้ว +6

      @@OTIS8883 not really. My grandma has a bakery, for the biggest amounts of bread she uses her Hobart mixers, however when she is making 6 loads or less she uses her Kitchen aid and never struggles. However seems like she is not using proper flour for her dough, that one seems like it absorbs too much water. When a dough is ready to let it grow it has some sort of shine in the smooth area of it, however this lady always does the same thing. Does not understand the reason tilt heds mixers make a bit when in high speeds or kneading, it also applies for bowl lifts why the arms shake or move, there can be no 100% stiff mixers with planetarium mechanisms are dangerous because they can break easily, so that less rigid parts absorbs part of the impact. That's also a reason why kneading needs to be done at low speed so if the dough gets stuck between the hook and the bowl the constant movement at a slow pace ensures the machine to use its input without compromising internal mechanisms. The thickness of the dough is bigger than the space the hook and the bowl leaves so the machine has to technically rip part of the though to pass through. Think of it like a car, if you need to go up a steep hill you need to set the the first gear to give the car more input and not speed. But theblady and her husband here don't really understand. They confuse wattage with power so they say that mixers companies use "different maths" which makes no sense. The only one that actually describes its power is the Kitchen Aid this machine here has over 1 horsepower. Also they always confuse when a mixer gets a little bit hot with problems, actually that's the second way besides the fan for the mixer to cool down, she has to release heat to the sorroubdings, that's why you can see Kitchen aid always has a thin head so the heat transfer is easier in case its necessary. That's the same mechanisms cellphones use because you can't fit a fan in them so they release heat to the external environment

Reason I ask is Im having delivered a new 'Pro Line' model with the 1.3hp motor as an upgrade to my old 260watt costco kitchenaid from the 90s. With everyone praising the vintage ones, I'm curious what your thoughts are.l when comparing old vs the new.

    • @AmyLearnsToCook
      @AmyLearnsToCook  7 ปีที่แล้ว

      I am not sure because a lot of people that like the vintage ones are usually referring to the Pre-Whirlpool mixers. I love my 5 quart that I bought years ago. I think Whirlpool bought it in the late 80s so my mixer was made probably 5 years later. I am thinking that they hadn't had enough time to do all their damage to the product yet (they probably had done some tho). I really wish I could come across a nice Hobart KA to see if there is a big difference.

      Clayton Turner can you report on your mixer? I have the 7qt proline delivered tomorrow.

    • @Clayphish
      @Clayphish 7 ปีที่แล้ว

      tspfull its been great so far. Ive made some pretty wet heavy artisan doughs in it and it chugs along. It stays very cool unlike my old Kitchenaid which would burn up before the safety shutoff would trip. There are moments when it does bog down like you see with Amy's mixer, but it doesn't seem to affect the motor in anyway. You can tell there is a serious amount of torque going on by just how much the mixer bowl flexes, so to see it continuing on without getting hot or shutting off or outright stopping is impressive. It does have the clicking noise like some complained about, but i think its just the latch on the shaft not being a machined /tight fit. It doesn't affect the mixer's work in any way and its a better design then my old mixer where there is a spring to prevent the clickiness as it can cause a mess if dough were to get caught in it. So far I find it to work really well. Doughs end up silky smooth quickly and gluten is developed nicely too. The whisk is awesome and ingenious!! I think you'll love it! Im glad i went with it over the cheaper A/C motor models. Great buy!

    • @tspfull
      @tspfull 7 ปีที่แล้ว

      Clayton Turner I was worried about the clicking sounds people have reported. I paid a bit more to buy it new at a brick and mortar store so that I would have the 5 yr warranty and could return it if anything wonky happens. Good to hear it's working well for you. Im excited to make some sourdough this weekend.

    I wish you hadn't edited out the tool removal. For these non-tilt mixers, that seems like it would be very messy(maybe that is why you cut it out). There aren't many videos of people using this commercial mixer on youtube so thank you for making it.

    How would you compare the 8 quart kitchenaid to the hobart n50? I am considering either buying one of these or a very old n50 for similar prices? The planetary gear shaft came loos on my pro 600 from making bread, the replacement part also became loose so I used JB weld to secure it and soon the planetary gear started bending from making dough, so i am in the market for a more durable mixer but not trying to spend a lot of money.

    • @cnnw3929
      @cnnw3929 5 ปีที่แล้ว +1

      With the Hobart, you have to be very mindful of the quantities presented in the specifications from the manufacturer. I can't say for sure if Hobart would service an N50 owned by a home user, so if it needs any repairs, you may be on your own. At this point, it all depends on your budget. Get the KitchenAid if you want a warranty. Buy the used Hobart if you're willing to take a risk. Shop around some.
      Also, have you thought about a different brand, such as a Globe SP8 or Varimixer Teddy? I spoke with Globe on the phone, and they will honor their warranty for a home user, as long as you would be willing to transport the mixer to a service center if it needs repair or replacement. The Globe SP8 may be a good option if you don't mind the lack of an attachment hub.

    • @sashineb.2114
      @sashineb.2114 3 ปีที่แล้ว +1

      @@cnnw3929 The thing that would put me off buying a Varimixer is lack of support for North America. If it breaks, where do we send it to get fixed? Two people on TH-cam said their speed control stopped working and that it cost a lot of money to get it repaired. Globe looks interesting, but I've read their warranty does not cover the cost of service, although they pay for the new parts.

    • @cnnw3929
      @cnnw3929 3 ปีที่แล้ว +1

      @@sashineb.2114 That's a good observation. Also, I recently purchased a Hobart N50, and will say it is definitely far better than the KitchenAid offerings. Mine had a few cosmetic flaws and was making some sounds that indicated the gears could be out of adjustment. However, I was able to take it to a Hobart repair shop, and they had it fixed. They also replaced the pedestal and back cover, which had a dent. It looks and runs like new now. While a Hobart is a huge investment, I would definitely consider it worthwhile because it will last several lifetimes.

      I see KitchenAid.com.au sells the refurbed Raspberry Ice for $629, which is more than the $400 USD that I paid (not on sale) for a new one, but with the exchange rate is not much more than $400 USD. So I'm not sure if $600 AU D is a lot to you guys or what. I hear Canadian's pay a $$$ for kitchen stuff like Le Creuset (way more than what we would ever pay). Does ANYONE sell this stuff on sale in Australia? I know Macy's here has pretty good sales at certain times of the year. I see kitchwaredirect.com.au wants $749 ($899 RRP), so I'm guessing the $629 is a bit of a discount. That still seems like a lot for a dang mixer! The glass bowl does add about $50 USD to the price compared to a steel bowl.

    Great job, wish I could afford one of those for large batches of whatever I am doing. I have a KitchenAid Classic 275 watt model which I am very pleased with, had to replace my West Bend stand mixer about a year ago when I was mixing frosting at high speed and one of the beaters slipped out of position, it bent the beaters and stripped the gears. It had that problem with the beater toward the center of the bowl for a while and I had been holding it in place when mixing softened butter or cream cheese at the beginning, it had never happened after the initial mixing had started. Oh well, I have a much better mixer now and am just amazed at how quickly it combines everything even on low speed. I am very anxious to see your other new commercial mixer in action, the one that is labeled the Amy edition from another country. I remember it is 350 watts and is 7 quarts capacity maybe, Well, it looks great but I was not very fond of that loud color they sent you, what was that yellow or green, it looked like a psychedelic green on my screen?

    • @AmyLearnsToCook
      @AmyLearnsToCook  6 ปีที่แล้ว

      Thank you Amy, my West Bend was sort of like a Sunbeam Mixmaster as far as the size of the beaters and the bowl size but that middle beater started slipping out after years of use and I knew at some point that the end was coming. Mother got that for my Christmas present I believe in 1987 so I got many years of use out of it. I had been checking anxiously for your new video on your new mixer, I think I like stand mixers almost as much as you do, I was always fascinated by them when I was a child, both of my grandmothers had a stand mixer when I was small and I always wanted to bake something just to use the mixer, not necessarily because I wanted the baked goods. Mother finally purchased a Hamilton Beach stand mixer when I was 10, the one with the two beaters connected into one piece and tightened into place with a twist screw in the front. Well thanks again, I will be watching for your video!

    This is great, I would like your advice if possible? Although I only intend to bake one loaf of bread or make 1 batch of pizza dough at a time but I really like the fact all the parts are much higher quality being stainless steel and I want to buy a mixer that will ideally cope easily making bread and doughs often and getting the commercial version makes me think its much less likely to have parts being damaged by regular dough making BUT will this mixer also mix small batches say 1 cup or cream or 1 batch of pizza dough, perhaps if I get the smaller bowl?

      @AmyLearnsToCook  8 ปีที่แล้ว

      +Zena Sue Biggs If you are interested in color and a lot of attachments, I would go with the KitchenAid. The Bosch is nice but to me it didn't knead as well. Mine seems to spin around the bowl. I've heard there is an attachment that you can buy...I think called a extender or something...to help with that. I am not sure how it works.
      I would look at the bowl lift over a tilt head because over time you might knock the tilt head out of alignment. So...that leaves the Pro 500 or Pro 600....other than the commercial which is probably too big for basic cookie recipes.

      +L Miller The Pro 600 is 575 watts and the Commercial is 1.3 horsepower which I think is about 1,000 watts I am not sure. The Commercial plugs into a standard house wall outlet so it can't be more than 1,200 watts or so or it will pop your breaker....otherwise you would probably have to use a 220 wall outlet. You usually don't have those except in your laundry room.

    My 600 pro died in under a year making bread they are sending me a new one not sure I will use new one for bread. I only make 2 loves at a time with 5 cups white flour on speed 2. But I make 6 bread total so 3x I do this and even though I let the machine cool down it still over heats by the time I do second batch :[ So we are looking at NSF Certified Commercial Series 8-Qt Bowl Lift Stand Mixer for bread making do you think it is worth it fully? As we make all our bread and no longer buy bread as store bread is eww lol. When you made the 4 bread did the mixer get warm on top at all?
    My bread takes 2 days to make and I have the most amazing bread recipe I found online if you want it. Part of this bread recipe is mix it up let it rise a bit punch it back down and in stainless steel bowel cover with cling wrap put in fridge over night to rise more. And it calls for instant yest so way less hassle with the yeast. This bread recipe makes light fluffy bread so good :] And now we find store bread gross lol.
    If you want the most amazing bread this is the recipe I found online and use it is the best and I never got bad bread from it in almost a year of using this recipe as well as it is for a kitchen aid mixer :] ...

      I didn't have any trouble with it heating up. I've only had a chance to use it a few times tho. I am jealous of your breadmaking! It sounds like you always have homemade bread around! Sounds yummy!!
      I will checkout the link. Thanks!

      Sweet good to know and thank you for the answer. Yes we always have homemade bread now once I found the best bread recipe for us.The only change I did was 1/2 tsp salt not 3/4 and I use stainless steel bowels to let it rise in fridge with the cling wrap on top.For what ever reason the bread seems to rise nicer in stainless steel then plastic. And we fully love this bread recipe to the point we have not gotten bread from a store since I found this recipe it killed store bread for us lol.
      After two days of phone calls to Kitchen aid I was able to get more money off the Commercial Series 8-Qt Bowl Lift Stand Mixer and should have it this week. They have very good customer service :] So once I get the new pro6 from from them in a few weeks it will only be used for dog cookies , cakes and human cookies lol. BTW I fully get why you have so many Kitchen aid mixers lol right behind you sister :} Either way you will win on the most Kitchen aid mixers I am jealous :]
      Small trick I use is make 6 pans bread and put them in Freezer x-large zip lock bags after they are cooked and cold / date bags and keep them in freezer until needed. Due to I only make 6 pans they all get used in 4 weeks lol. I was making bread every week and it made me nuts as it takes 2 days. So this way I only have to make it every 3 or 4 weeks :] And no more store bread full of fake food lol.
      EDIT... One thing I did find out about my 600 pro it was on a store shelf for two and a half years and maybe this is why it died so fast ? So this is why I went to buy the 8 from Kitchen aid and not a store. Never going to buy another kitchen aid from store just from Kitchen aid lol.

    • @AmyLearnsToCook
      @AmyLearnsToCook  8 ปีที่แล้ว

      I have a few bread videos. I am not sure if they are light and fluffy enough. Homemade bread usually isn't like that because commercial bread manufacturers use chemicals and lecithin to get a certain mouth feel. You can add lecithin to your bread but I prefer not to.

      It all comes down to how bread is made and how it is done believe it or not bread dough in fringe over night helps as well as the water roux :] I double dare both of you lol to try this recipe I found for amazing light fluffy bread. Yes this takes 2 days to make so longer then other recipes but so amazing and so good we no longer buy bread so it is fully worth the work . I make all our bread now as stated in my post above. Amy this recipe will blow your mind on how good this bread is if you do every step as she has posted. And no junk in it like store bread just really good home made bread :]

    So which of all the mixers do you think is best for mixing 9 loaves of bread, which we do every week. We have an old bosch mixer about 23 years old and we are ready for a new one. What's your conclusion. KitchenAid Pro Line 7qt or 8qt, Ankarsrum or the newer Bosch or something else. We also make lots of cookies, etc, with 12 people in our house the kitchen is always busy.

    • @AmyLearnsToCook
      @AmyLearnsToCook  6 ปีที่แล้ว

      I wouldn't get the KA if you plan to mix 9 loaf batches. I would look at the Ank, Bosch, or a Hobart.

    • @cnnw3929
      @cnnw3929 5 ปีที่แล้ว +2

      @@AmyLearnsToCook I think the Ank would fit this person's needs best. If they plan on adding cookies to their baking activities, then a Hobart would be the better choice. None of the mixers designed for home use are going to be suitable for a commercial work load. The Ank has its limits, and would definitely cost more to repair than a KitchenAid if it was overworked.

      @@cnnw3929 come on people.
      If you're mixing concrete use a concrete mixer.
      If you're making bread then don't try and use your K5 kitchenaid to make 37 loaves a day for your bistro.
      Kitchenaid mixers are perfectly made for the job they're intended to do.
      People who complain are using the mixer for a job they aren't intended to do.

      @@johnnyneon22: It never ceases to amaze me why people with bigger needs, won't budget for more than a $700.00 unit that's essentially designed for home use, when they need something that's more up to their task. What you write here, is why I put out twice the amount over the cost of an Ankarsrum (formerly the Electrolux Assistant) back in the day, and bought the commercial geared machine with an oil bath gear case and 1/2 horsepower induction motor I have now. And it still runs strong after more than 15 years of regular use, making heavy bread doughs that save me tons of money over the store bought varieties. I will never regret the $1,500.00 I spent on its purchase. It paid for its self over 10 years ago!

      Both the 7 and 8 quart share the same body style and dimensions. The 8 quart has a taller bowl. You can use the bowl from the KitchenAid Pro-Line 7 on the Commercial 8, or vice-versa. You can also buy 5 and 6 quart bowls for the Commercial 8 and Pro-Line 7, and they will interchange with both mixers. KitchenAids are the most affordable mixers to own and get parts for!

    I have this model mixer. The planetary gears have been replaced once. Now the second planetary gears have failed. Kitchenaid is using cheap plastic gears instead of the metal gears that were used to make my first Kitchenaid mixer that I bought in 1970.That mixer was worked hard in several commercial kitchens and finally wore out about 4 years ago. Quality is no longer important to Kitchenaid. I'm not going to pay $200 plus to repair it and replace it with a Bosch compact mixer.

      +Boy With A Sax Thank you for watching and commenting. Have you seen her pan room (or Pan Cave as she now calls it)? It would be like asking a parent to pick a favorite child. They all are great! I like her ricer. I use it to quickly turn lots of cooked potatoes into lump-free mashed potatoes. For appliances, I use the Vitamix daily, so that's my favorite. It destroys things in a hurry. Yesterday, I fed a large carrot into a smoothie. In under 3 seconds, it disappeared without a trace. No noise. Just the same whirl and it was gone. Runner-up appliance is the Tramontina Induction Cooking system. It heats stainless steel pots and pans so nicely (and quickly). I like the Camp Chefs we have for outdoor cooking. 50K BTU burners. Woo-hoo. Favorite pan? I like her fully clad William-Sonoma branded saute pan (or sauce pan?). It just cooks so nicely. I like my Lodge cast iron pan for cooking on the grill doing fajita meat. Favorite knife? I like the 14" Forschner, but the Victorinox chef knife keeps sharp and was very affordable.
