  • Today I am experimenting by making different types of mayo, including banana mayonaisse and peanut butter mayo. This video is definitely interesting, and the results, were not exactly as I expected.

    The way to make mayo with a stick blender is to use a mug that's only slightly wider than the blender, egg at bottom, blender in, all the oil on top, turn on blender and pull up.
    Makes the mayo in seconds basically foolproof

    My first job was in a restaurant and we made large bacon trays every day, the best and safest way to do that is to put a layer of paper towels on the tray, on top of that aluminum foil (if you can), then the grill then the bacon, it is *WAY* easier to clean after and a bit safer.

      That's not a bad idea. I've heard of using mayo instead of eggs and oil in pancakes/waffles, so i bet it'd be really good there as well.

      top a cheesecake with it and do a second bake. regular mayo is THE baked cheesecake hack i imagine the banana one would be pretty great

    That seemed pretty bad, i hope you take care of that and watch out for things like that in the future, the kitchen is the most dangerous place in a house and dealing with hot oily things require extra care.

    Some people use mayonnaise in place of butter for grilled cheese.. Careful consideration may be required for the choice of cheese. Sharp and savoury cheeses like cheddar might not be the play here, so perhaps something more suited to a dessert? Gouda or maybe Camembert? Even a flavoured cream cheese if you're not trying to chef it up too hard. Make it with some sweet, fluffy brioche, serve it with a bit of jam, and this could be a real hit for breakfast.

    The worst food crime in this video is making the mayo with the egg white, it's a sure fire way of hindering any mayo from reaching it's potential :'(

    A good application for that is boiling some potatoes for a little while, but not fully, then removing the insides of the potatoes so they become kind of little bowls, mash what you removed with the mayo and uncooked bits of bacon, fill the potatoes back and place some parmesan cheese . Then you bake them in the oven until the parmesan is crusty gold along with the bacon. It's hard to describe how good it is.

    Pineapple mayo sounds like pretty appetizing variant that would go well with more pairings than the banana lol.

      Three months later, I was going to post that instead of using lemon to make "regular" mayo, he could use pineapple vinegar. I have not done that, but somebody could.

    Your story of how you got burned convinced me to move my microwave, from atop the fridge, where I've been keeping it, to my kitchen table, where it's nice and low and there is no chance of me spilling something on myself when I pull my food out of it. And don't worry, no can see the burn, you look fine.

    The problem was not too much oil from the peanut butter - I think I've seen an experiment addressing this by Blumenthal and friends, and they found the lecithin in a single egg yolk can set about a bucket of mayo. And after adding lecithin granules, this definitely wouldn't have been the issue. Just go a bit slower and it'll work. I'm not sure on the effect of egg white in mayo - haven't seen this before! - but it didn't seem to interfere much. As this part of the food crime series anyway, I don't think it's an issue ;)

    the "original" Elvis sandwich (as made by his personal chef) was actually fried in butter (like a grilled cheese)!! maybe you could try using the "banannaise" instead of butter to fry (as some people do with regular mayonnaise)🤣🤣
    perhaps you'd get some caramelized banana action on the outside?? 🍌🧐

    Here in Argentina we have a pretty popular classics that include banana (and not plantain) as a main flavor component:
    Suprema a la Maryland (we call "suprema" to a chicken schnitzel, although is also made with beef and then its called "milanesa"). And in this case is the chicken schnitzel, with a sweet corn sauce and fried banana, and thin french fries.
    That being said, I think the banana mayo would fit great with a schnitzel.

    I actually want to try a "sweet" mayonnaise like banana. Maybe try honey next time? I'm not sure if acidic fruits would work because you'd have to reduce the lemon juice, but maybe try strawberries or blackberries?
    P.S: Glad to hear you're okay! Grease burns are always terrifying in the moment.

    I would have used the banana mayo in lieu of butter to pan fry the bread like a grilled cheese. I'm not sure how that would turn out, if the bread would form a nice crust and the banana would caramelize but I'd be very interested in seeing that.

    you are my favorite "nobody ever does this stuff" food guy. although i'm surprised this wasn't a full blown BLT with the banana mayo. that's what i thought you were going to make. because i thought adding banana flavor to a regular BLT was going to seem more odd.
    but really? peanut butter mayo can't even be good in a southeast asian sort of dish? i would not have guessed.

    There was a NIckelodeon video where they fed various stars like Jojo Siwa a bunch of weird sandwiches and most of them loved the banana and mayo on white bread.

    You know, considering the philippines made tomato sauce out of bananas, i’m not super shocked that this worked out great in the end. Although i was not expecting the egg at all, i thought you would make an eggless banana mayo (banana, oil, vinegar, lecithin) which i would love to see you try making too lol. 10/10 would try making this in my free time though, cheers!

    you can turn any liquid with protein into mayonnaise, you dont need eggs or any other binding agents,
    you could make a banana or peanut butter mayonnaise with milk

    Weak emulsions can be brought back by adding a little water. Sometimes it’s not just about how much emulsifier you used it’s also about the balance of oil and water. Sometimes you just added too much oil!

    OK but what I thought you were gonna do was use the banana as the emulsifier (instead of the egg) and now I really want to know if that's possible. I'm vegan so I use aquafaba, it works really well, and I know banana is used as the emulsifier in vegan baking. Sidenote, I've been eating peanut butter banana and mayo sandwiches for a while and it's really delicious, strange as it sounds

    There's this lady I've seen on tiktok who makes what I assume to be soul foods and one of them was a chocolate cake for which she used mayo as one of the ingredients. I wonder if she'd try to use this mayo for her recipe and talk about how it changes

    I think the peanut butter mayo wud work better if you used either powdered peanut butter or even just powderised peanuts instd
    Flavourwise i feel youre gonna want somethin more there tho than just peanut/pb, egg, oil, and lemon juice. Id probs think to add like cinnamon, honey, and vanilla; any or all of those will help round out the flavour more. Cocoa powder wud too.
    Tho you cud go the other way and use spicy and salty and sour flavours to complement the pb flavour; i bet youd make a prty good creamy spicy peanut sauce if ya added even just gochujang to this pb mayo

    I don't think banana mayo is that weird in the way that you prepared it (it definitely would be if you added garlic and mustard though). I can definitely see how banana could work in a more creamier application like this. I wonder if it would taste better if you added a hint of vanilla or if that would make it weirder since mayo has a different texture than cream and it would confuse your brain. Do you think something like a vanilla mayo could work?
    Also, I've heard that some oils like olive oil change their taste and get more bitter when blended (I usually don't believe in this stuff but there was a blinded test I remember watching where people could identify it. Maybe something similar could happen to the oil in the peanut butter making it taste worse too.

    My favorite version of an easy weird "mayo" is a cheap, healthy, fat free, vegan quickie... Blend the heck out of a medium sized boiled potato with soy or almond milk until very smooth and creamy, add 2 TBS each of vinegar (or lemon juice), and Dijon, and 1/2 teaspoon or more of kala namak (black salt.. a sulphury salt with an eggy flavor.) It thickens once refrigerated and can be used like the real thing on anything. For kicks I made a potato salad with the potatonaise... somewhat redundant but pretty good.

    This has more logic than youd expect. A very classic depression era sandwich is mayo and peanut butter. Your mileage may vary but theres people that love them. Im more for pickle and peanut butter sandwiches

    you maybe already know about this, but you can switch the eggs for milk to make mayonnaise. look it up online in case you didnt know, i think its better that way.

    I got so excited when I saw this video, until I saw what you were calling "banana mayonnaise". My great grandmother Croll used to make real banana mayo. It was a darker caramel color, drizzled over bananas on a lettuce leaf and sprinkled with salted peanuts. Whatever this stuff is, you should change the name!
