    250g rice, 2.5L of water, let it boil without lid on pot for 20 minutes, then turn off heat and put lid on top and let it steam for 30 minutes - so simple and delicious

    I’ve struggled with feeling nauseous after breakfast all my life. Then I started eating rice porridge in the morning. Made all the difference. It’s gentle on the stomach and wakes the body up!

    When I first started cooking, I accidentally made rice congee the first several times I cook rice, I just didn't know it was a recipe and threw it out. LOL I also made smoky black rice several times, but as far as I know, that's still not a dish.

    My mom and grandparents used to make me this all the time when I was little! I couldn't go a day without it. I eventually stopped but recently I have been craving it so much. I finally made and I'm actually eating it right now. I didn't really use a recipe I just used common sense I guess lol. It's really simple it just takes patience. I find it funny that I'm looking at recipes AFTER I made it. I love congee. 😍❤❤❤

    My grandma made this whenever I was sick. Sometimes she'll add small pieces of chicken and a bit of soy sauce.
    Such a comforting dish.

    People in the South Indian state of Kerala also eat rice porridge. While it is called Congee in China, in Kerala it is called Kanji (pronounced almost in the same way)

      @@daughterofgod8152 There are different types of Kanji (Congee) in Kerala. If you pour some milk and some sugar It becomes Milk Kanji. If you cook it with green gram, bit of salt and grated coconut it becomes rich in protein. Use friend dried fish with it. Try different Congees

    I tried congee with shedded beef and chopped spring onions. I didn't fancy the idea of it but it was so comforting to eat and my stomach felt lovely. I could feel it was doing good. Now I have had it a few times and I have come here as I am actually craving this.

    In Brazil we have a dish called "Canja de Galinha" which is chicken boiled with rice. Galinha means chicken but the word Canja clearly comes from the Asian language since it doesn't mean anything in Portuguese. We also have a big Asian population there, they probably influenced the dish and the word/dish Canja, since rice is their primary food as well! We like to eat it when we are sick, not for breakfast.

    Just like fried or rice or tacos. You can add anything you want to it. As long as they’re ingredients like you it’s always gonna be good. I like putting eggs into mine with sriracha and eating with kimchee. I’ve seen some even add this with just ketchup lol but if they like it no one can go wrong!

    I grew up in the Midwest and we had this with sugar, milk, and raisins. Sometimes we’d sprinkle in some cinnamon. Occasionally we’d add some peanut butter or a packet of hot chocolate instead. I’ve tried it savory but it’s just not the same. Never had a name for it though.

    On Spain we call this arroz caldoso (like soup like rice) some families add a paled garlic or 2 while boiling and then remove it before serving. Help when you feel sick or nauseous.

    I used to come to my friends house in the morning since we walked together and she'd be finishing up breakfast and she would be eating this, her mom would ask me if I wanted some but I always said no thank you because I didn't want to take their food. Secretly though I really wanted a big bowl because it looked so good and I didn't have breakfast at all xd

      Oh my god! Till date I remember when my friend and I went to her house because she wanted to have lunch. She offered me some, and I politely turned it down, expecting her to ask again (as we do in India). But she did not ask again, and started eating while I sat there awkwardly, secretly really wanting the delicious meal. And I never forgot it even after 3 decades. LOL!

      @@wenaldy in most asian cultures it's considered rude to refuse food, its like saying you think their food is not good enough for you, and in some country they can get really offended. Only on west refusing food considered polite which is bs for me. Just buy/make food next time and share with your friend and problem solved. Both of you can try new foods so it's a win win

      Interesting in Texas we have a Mexican beverage called champurrado if it is with chocolate or atole if it's just milk and vanilla flavored. I'm not sure if it's rice or corn because I just buy the mix to add to hot milk.

      I'm pregnant and lost about 8 pounds from puking now :( my brother is an EMT and he said to eat rice before bed because I usually puke up my dinner and then go to bed hungry which means low blood sugar in the morning and more sickness... Anyways I was thinking about rice porridge and I'll have to make some. Although a much smaller portion because this is so much!

    It is called hot kanji in Tamil nadu state in india .This is our traditional breakfast. Nice to see in Chinese tradition cooking.

      Congee is simply boiled, soft rice. You can! You can make it salty, you can make it sweet. Add meat and vegetables or sugar and milk, or leave it as is. The rice is delicious however you make it.

    please mention the condiments i.e. spring onions, white pepper, soy sauce, ginger, sesame oil and then flavourings such a ham bone, sliced beef, dried abalone if u can get it, , etc.

    I thought there was something missing ... the steaming step. The Way I was taught, you just straight up boil the Rice and let it sit on residual Heat for a little. However, going to a Chinese Restraunt, I would always notice the Congee is more soupy and easier to eat.
    And I’m currently eating leftover Rice Mush (That’s a better Name for what I was told to make) because no one else is going to
    I’ll keep in mind to boil at the end

      In mexico we make rice pudding we add stick of cinnamon with the rice as it boils. Then once its cooked we add evaporated milk and sugar and raisins, my mom adds orange peel. It's more of a treat than a proper breakfast its actually considered a dessert.

      This is Awesome you actually can, just put in a thumb as the height of water in it, then put the rice in. It may bubble out if you don’t do the ratio of rice/water right tho.

      yea you can add literally anything on top. my parents usually pan fry some fish to eat with it.

      Believe it or not we have rice soup also in kerala (southern state in kerala)..it was bought by Chinese traders,we also have Chinese pots and Chinese fishing nets and also communism all from China 🇨🇳♥️

      You can add salt. If you go to a restaurant in China and get it, it's usually salty and may have little bits of ham or whatnot. You can also put a hard boiled egg in it, or put some pickled vegetables on top. That's how we always did it in Hangzhou.

      Every region has its different kind of way of dressing it. As mentioned above here you can add salt and little bits of ham. The way that I've been eating it was cooking it with chickenstock so it has flavour but add no salt yet. And in the end we dress it with chilli oil, sesame oil and soy sauce for taste! Of course you can add toppings usually it was chinese fried dough, shredded boiled chicken, peanut, ginger strips and green onions! Its amazing hangover food also lol. I am really hungry now.

      a lot of the time we eat rice with side dishes. So this is the same case with the porridge, there's some side dishes that have flavor so flavoring the porridge isn't necessary.

    I tried following exactly the same thing she did (except for the amount of rice), but I got a portion of rice instead of porridge lol. Might need to add in more water I guess.

      Make sure to boil it until it creates a sort of thick fog liquid and until the rice falls apart. My mistake while trying for 3 hours was always not boiling long enough

      My parents are from Kerala(south india), and my mom made kanjee whenever I caught a cold. She would also place pickles in it(lime pickles usually).

      No, it's just rice. Some people use broth instead of water for some flavor, and top with things like shrimp, bacon, and spring onion. Or even make a dessert version with cream, fresh mint and strawberry. Very tasty!
