Some people also call them snap switch or disk switch. It has a piece of metal as you said that expands or contracts with heat which open and closes the switch. My future son in law has one on his wood stove that controls he blower motor when the fire dies down.
Trying to remember...Is it a time delay relay with different time settings that brings each stage of heat in?...Like 5KW then 5 KW more and then 5 KW more for 15kw of heat?

Mobile homes use them for their heat strip...... Fixed my brother in laws years ago...

You also check them by ohming them out they should read 0 if they read a higher number than 1 or 2 it’s bad .
