@sushimama123 If you loved mazipan like I do, It could never be too thick. I have started my christmas cake and all there will be on it is mazipan. Plus all the sherry and rum that will go in and on top off it.
I use fruit jam to my cake before putting tyhe marzipan and also do the same way that u do put a lot of jam to the cake, but some times I have jam running down the side after the sugar paste is put can us tell me why
When i roll out the marzipan, it starts cracking around the edge and as i keep rolling out, it starts tearing at the cracks. any tips on how i can get the marzipan to roll out like in the video?
No, marzipan is not fondant. It has a similar texture but you have to buy it pre-made. The thing is, fondant tastes awful, it's just sugary and that's it while marzipan is made using almonds. It's mostly sweet but it has a mild taste, some people might not like it but it's not too strong to overpower the cake, especially if you roll it thin. Where I live you can buy all kinds of cake toppers made out of it and kids love to eat them with the cake.

do you need to cover a cake in marzipan or can you just cover it with fondant straight away?
what is the purpose of the apricot jam, when you cut the cake won't it come away from the cake.
