I used to make mint jelly and I loved it best on toasted English muffins with melted butter on top, then the jelly 😋. Good stuff!!! Glad to see someone else enjoys it too 🙂
YUM!😋 I think that's so awesome!!! I like the apple juice recipe, I think because I like the taste of the apple with it. The one I made isn't made with lemon juice or apples, but it still has a tart, lemon like flavor from citric acid. I plan to make thumbprint cookies and fill them with different jellies, like mint, and do something for the holiday season this coming Winter. I have to add the food coloring to mine. If I don't, people will think I'm trying to give them jars of spoiled food or something 😂

This might be a stupid question, but is mint water really strong enough that only half a cup of it will overpower the flavor of four cups of apple juice and two tablespoons of lemon juice?
I added the steeped leaves( in a muslin string bag) back in to the pot to infuse the boiling solution a bit more..working well. Makes it so much more minty. Only in there for about 30 mins though, at the very beginning of the rolling boil

Do you realize you put rice in the recipe instead of mint? Lol Looking forward to trying this, I made mint jelly before, but with citric acid, it was good. @@beesandseeds you need to correct the recipe in the description. You wrote RICE, not mint leaves. Also no pectin needed to thicken? Have you tried mint extract?
I honestly don’t know. The sugar helps with preservation and jellying. There are low sugar pectins at the store. I imagine you could make it following the pectin instructions
Do not put hot liquid into a cold jar, or it will break .plus jars need to be sterilised,so place in the oven to both sterilise and obviously heat up ready for the hot liquid
True! Thank you. I should have mentioned mine were sterilized in the dishwasher and kept on low in the oven. When I was young we sterilized them in boiling water and they just simmered until we pulled them out to fill. Dishwasher and oven is less messy.
OMG lady you have no clue what words to say and why do you have RICE in this recipe. You are not making an extract not even close. You are steeping the mint... which you should at least chop to help release the oils.
I changed rice to mint. Glad you mentioned it. I thought I’d done that a long time ago. I misspoke. I knew I wasn’t making an extract, trying to extract the flavor not make an extract. it’s a mint jelly from the steeped leaves. It turned out delicious! Try it

Yes, it’s tasty. It’s minty but not overpowering mint. We really like it.

Lady Cheryl I have heard of making jellies and jams with sugar replacements and using gelatin as the thickener. Maybe that would work

Yes it does. You can also use a recipe with pectin to thicken it when making it.
Mint is super easy to grow if you have somewhere to plant it. Then you won’t have to buy it anymore 😊
