I bought a couple of stainless ones you have had on your channel, willow & Everett, cuisinart, and a carbon steel. I figure I liked the blue diamond so I started with it. I don't cook on high heat and use silicone utensils.
I was surprised that Helen chose the natural, although it's the better choice I think that the non-stick is the better choice for Helen because the occasional use would not peel or wear out
