The strip is too thin to be passed through the finishing calendar/mill so 2 strips are passed through at once is my understanding. I would have to hazzard a guess that the shiny side is the one contacting the rollers, but could be wrong. In a breif moment at 8:26, you can see the 2 strips, 1 over the other.
