  • To compliment my last "what I eat in a day" video, here is what I eat on a rest day as a professional triathlete. This is an honest snapshot of how I fuel my triathlon training on an easy or rest day to not only optimise recovery but also prepare my body for the next few hard days of training. Rest day triathlon nutrition is important for everyone, whether a professional or not, so I hope you enjoy this video and remember to stay fuelled and stay happy!

    Hey All! After quitting my job, years of failure and asking "what if", I made a promise to myself to jump; so here I am giving professional triathlon the full commitment it deserves, going all in and sharing the journey with you. Thanks for joining.

    Pancake Recipe:
    100g Flour of choice
    1 tsp Bicarbonate of soda
    Sprinkle of cinnamon to taste
    1 Egg
    100g Fat-free greek yog
    150ml Milk of choice [more as you like]
    Water if you need it a little bit runnier!
    Mix everything together. Leave it to sit for a few mins. Butter/Oil a non-stick frying pan and ensure it is HOT before you start. Add just over a TBSP of the mixture at a time. Cook for a few mins on one side, until it is bubbling all over, then flip and cook for a few more mins. Repeat till the batter is gone!
    Top with whatever you like and enjoy!

    Fuelling on an easy day is just as important as fuelling the harder ones to not only optimise recovery but also prepare for the harder days to come.

    As an eating disorders dietitian and sports nutritionist, for me it is absolutely wonderful to see your videos and listen to your approach to your sports nutrition. I hope the people who watch them can take your approach to their eating and relax about their diet.

    Great stuff, very cozy vibe. Oatmeal for dinner is a staple for me in the winter months, sometimes I just want a big bowl of warm porridge to warm up after a cold day.

      Totally agree, oatmeal can just fit in anywhere! Especially when it is cold.

    Do you recommend any good night snacks? I often get hungry/sweet tooth after dinner but have been getting GI issues when I wake up for my early morning training so worried the snack is causing that?

      Hi Lauren! Sorry to hear you're having this issue. If I have an early session the next day, I try to go with something low-fibre with protein and carbs, like rice pudding or greek yog with some granola or even simple cookies! Are you having a lot of vegetables with your dinner the night before? This could also cause this, if so may be try moving them earlier or halving them at dinner and doubling up somewhere else. I hope this helps or at least gives you some guidance!
