Resepi Soto Ayam Kuah Pekat Berempah Tanpa Rempah Soto

  • Sambungan dari resepi nasi impit kelmarin, kali ini saya kongsikan cara saya membuat soto ayam dengan kuah yang pekat, ala-ala soto di kedai makan tu tanpa menggunakan rempah soto. Rempah soto ini perlu ditumis sebentar supaya rasa bawang tidak mentah dan untuk mendapatkan kuah soto yang lebih harum memikat. Soto ayam ni sesuai untuk hidangan petang, atau untuk sebarang jamuan, rasanya tidak muak.

    Jumlah Hidangan : 10-12 orang
    KUAH SOTO
    Bahan Kisar :
    10 ulas bawang merah (saiz besar)
    1/2 biji bawang besar
    4 ke 5 ulas bawang putih
    2 ketul kunyit
    1.5 inci halia
    4 biji buah keras
    Air secukupnya
    Bahan tumis :
    Minyak masak secukupnya
    1-2 batang serai (ketuk)
    1 ketul lengkuas (ketuk)
    3 sudu besar rempah sup
    1 sudu besar rempah kurma
    1 sudu besar serbuk ketumbar
    1/2 sudu besar serbuk jintan manis
    1 - 2 sudu teh serbuk lada sulah
    1/2 ekor ayam (potong kecil) atau bahagian kaki dan tulang sahaja
    4 ketul dada ayam
    2 - 2.5 liter air
    1 -2 ketul kiub pati ayam
    1 sup bunjut
    2 -3 akar daun sup (cuci bersih ya)
    Garam secukupnya
    BAHAN SAMPINGAN :
    Suhun
    Kacang tanah
    Hirisan daun sup
    Bawang goreng
    Ayam yang disiat
    Bergedil
    SAMBAL KICAP :
    Sedikit minyak untuk menumis
    1 ulas bawang putih
    1 ulas bawang merah
    8 - 10 tangkai cili padi
    Air secukupnya
    Kicap manis secukupnya
    Gula secukupnya
    Garam secukupnya
    Air tepung jagung (1 sudu teh tepung jagung + air)

    This is the second part of the chicken soto recipe, which is on how to make delicious, savory and thick soto gravy without soto powder. In this recipe, the spices are sauteed until fragrant to remove pungent flavor of the onion, to enhance the flavor of the gravy. The dish is perfect for many occasions and for tea time.

    Serving : 10 - 12 people
    SOTO GRAVY
    Blended mixture :
    10 shallots (big size)
    1/2 onion
    4 - 5 cloves of garlic
    2 pcs of turmeric
    1.5 inches ginger
    4 candle nuts
    Water
    Stir Fry Ingredients :
    Cooking oil as required
    1 - 2 lemongrass (bruised)
    1 pcs galangal (bruised)
    3 tbsp soup powder
    1 tbsp korma powder
    1 tbsp coriander powder
    1/2 tbsp fennel powder
    1 - 2 tsp white pepper powder
    1/2 chicken (cut into small pcs)/ or chicken feets and bones
    4 chicken breasts
    2 - 2.5 liters water
    1 - 2 chicken stock cube
    2 - 3 chinese celery roots (clean thoroughly)
    1 bag soup spices
    Salt to taste
    CONDIMENTS :
    Glass noodles
    Peanuts
    Fried shallots
    Shredded chicken
    Chopped Chinese celery
    Potato patties
    SOY SAUCE SAMBAL :
    Cooking oil for stir frying
    1 clove garlic
    1 shallot
    8 - 10 bird's eye chilies
    Water as required
    Sweet soy sauce as required
    Sugar as required
    Salt as required
    Cornstarch mixture (1 tsp cornstarch ‪@barulghosh‬water)
