I tried this recipe with multiple temp/time settings. 310F 5+4min worked best for me. For best result you need to spray A LOT of oil just like 9:27. If you need that much oil why not just deep fry it. The air fryer would yield a more bread-like result as at 10:14. It would basically afford a hoagie roll with a crispy shell and a soft/chewy interior. The texture was shown at 10:48. It didn't taste bad. But it was definitely not a typical fluffy Youtiao. I found the best way to enjoy this was to eat it as a bread stick. Simply dip it in ofc soy milk, or tomato sauce. With that said I would still recommend trying this out if you are just preparing a healthier Youtiao for yourself and your family. Thanks for sharing this recipe.

They said avocado oil has a low smoke point. In other words it oxidizes quickly in less heat. That's why they use vegetable oil instead of avocado or olive oil to prevent oxidization. Is this true?
No yeast ??? I am sorry … but what is the point of fermented your dough in the fridge overnight when there is no yeast ??? And … the dough won’t rise anyway before u put it in ur air fryer. I think it looks good but … maybe the taste might not be like Chinese doughnuts.
traditionally there is no yeast used in Youtiao. It is not a fermented food, per se but rather a risen food. The interior rise is caused by the action of the baking powder when it interacts with heat, liquid and oil. In Chinese bakeries, they do not use baking powder but rather they use Aluminum. There are as many Chinese fermented foods as there are stars in the sky--a whole world to explore, but youtiao are one of those lovely, guilty pleasures that are not technically a fermented food. The reason you let the dough sit overnight is to allow it to develop some texture and flavor from the minimal fermentation. As someone else observed, fermentation occurs without yeast.
Does not look crispy and not sufficiently airy inside. I watched to see if I can make croissant without rolling the dough many times for folding to make layers. Anyway, good job.

Since you've baked it in an air fryer, it's more like a bread than a doughnut. Which is why the texture is dense, right? Not bad by the look too!

Great idea. I might try air fying. I think you might be missing an important ingredient, Lye water 碱水. Lye water gives it its distinctive flavour.

This is not a bad idea at all... regular chinese donut deep fried/cooked in oil so yeah, not so healthy but oh so tasty

There are a few reviews of the air fryer which mention a plastic smell. Do you have that same experience?
There was some plastic smell in the beginning, but after a few uses it burned off. I recommend opening the windows for those first few times.
