I’m a Yorkshire lass and when I was younger the whole street would celebrate bonfire night together and we go into each other’s houses and eat the different foods that Mums had prepared such as toffee apples, Yorkshire Parkin, treacle toffee, jacket potatoes, it was all community spirited back then. We’d enjoy a street bonfire with a guy Fawkes ( that us youngsters made) and fireworks! This recipe has brought back those memories, thanks for sharing Keith!
I make a version of this substituting the oats with a good quality muesli, also add a heaped teaspoon of cocoa powder, not authentic, but a very tasty variation.
I just remembered Parkin! It popped into my head for some reason and so my wife and I looked it up and found your lovely video on how to make it. I vividly remember having this as a boy in Lancashire but my wife had never even heard of it. We will definitely be trying your recipe so thank you for the well made video. By the way..... I think Bonfire Night is more about celebrating catching Catesby, Fawkes et at... mind you I can see why you thought otherwise ha ha.

My husband’s grandmother made this. She was from Huddersfield. I had to learn to make this before he would marry me, along with Yorkshire Pudding. Happy to say I passed the test. He seems to remember she used the steel cut oats.
So my mother and I took a trip to Dover England, then to London in November many years ago. We were both excited to try new foods, however what we came across was what we ate back home in the Midwest except for the fish and chips. I wish we could have bought this in a shop somewhere and tried it. Maybe this is not sold in shops, if not, you guys are losing out on money because one of the things people who are traveling want is to try foods from that region. You can make golden syrup by adding 0.25 teaspoon of citric acid to 1 Kg of boiling sugar syrup. When the sugar is nearly all dissolved, it will froth up and go all over the stove and floor. Only fill the saucepan one third full and be ready to move it off the heat.
I can smell it baking through the screen. I did mine yesterday (Friday) for the bonfire party on Monday night in Bradford. Did you hear about the Yorkshireman who drove his family to see a firework display? They pulled up into a field and an attendant started to show them where to leave the car, then came over to collect the money. The Yorkshireman wound down his window and said, "Nah, then owd cock! 'Ow much is it for t' parkin'?" "£5, sir", replied the parking attendant. "Bigger that!" Says our hero, "I'll just 'ave a bag o' bonfire toffee!" I'll get my coat.
My dad loved Ginger Parkin (as do I)and begged me to make it along with tea cakes. Shame I never figured out malt loaf before they both passed but I have now and shared with the local expats and I even found lurpak butter at an import store 👍💕😋

Probably the longer time, 75 minutes, but check with a skewer 15 minutes before the end. Size, can't really say, but you mixture should three-quarters fill the tin.

I thought treacle and molasses were not interchangeable. Only because of the taste. In America we have a few different molasses types and then there is sorghum. Which is molasses like but sweeter. Which do you think would work best for this?

I’m a damn Yankee, though the family name has been traced to somewhere near Scarborough, so at some point I should make a regionally appropriate version.

Parkin is very much a north of England thing, and it's also seasonal - mostly consumed October/November.

I thought treacle and molasses were not interchangeable. Only because of the taste. In America we have a few different molasses types and then there is sorghum. Which is molasses like but sweeter. Which do you think would work best for this?
