Thanks so much (akun churan?) for posting, as I wanted to learn how to make prahok, as I’m not sure if it can be bought readymade in Asian markets (perhaps in Long Beach’s Cambodiatown?). I do Asian cooking (Burmese, Chinese a couple of Indonesian dishes) at home and wanted to learn to cook Khmer dishes, though I was only briefly in Siem Reap and didn’t get to sample much in the way of local cuisine. I have made kroeung from scratch once that came out good, and would like to do the same with prahok, which seems similar to the Thai pla raa, Lao padeak, and the Burmese ngapi savory, spicy, salty fermented fish condiments. The Burmese also use fermented gourami fish (as I remember my Burmese wife using it) to make ngapi from scratch, though I recall that she cooked/reduced it a bit, which perhaps added to the smoky notes in ngapi (they do a thick paste version, watery sauce version and a fried version that is highly addictive). I look forward to trying it and expanding my Asian cooking repertoire. Cheers!

    • @LG-lb7sf

+Maulin Agrawal its pronounced "pra-hok" when you speak khmer formally and correctly but everyone has different accents and the colloquial pronunciation is "ba-hok." So the "r" sound disappears. But either one is correct ;)
