Very good question. I think most people do just use a spirit level. Unfortunately, levels aren't perfect and often when the reveal are getting installed, it's a dark rainy day. The result is that each side might be a few mm out. If the sides are going opposite sides, there is zero chance your doors will work on both sides. In this case, the doors are only made to go one way, so it's no big deal. That said, if you have a digital or laser level, you could probably do away with paralleling them.
