You're spot on about track position being more important when you can't overtake but you got the strategy mixed up. An overcut is good when you CAN overtake because you use the benefit of the fresher tyres if you pit after the others.
An over-cut is only good if undercutting would bring you into traffic. Even if you can overtake it still holds you up and costs time. So pitting later into fresh air saves time and tyres towards the end

You should use a set of parts just for practice and then change to fresher parts after practice 3 so you don't take any penalties. Always use older parts for practice and the newer parts for quali and the race. Also look to change the car setup if you don't already
I think he's going to get bored of coming P15-20 soon or thinks that it isn't really good content for viewers to not see a fight for points. Let him try getting to points consistently first lol before making it more difficult
Josh, have you ever changed your setup ? Monza is the fastest track in the calendar everyone's using lower downforce (on a dry race) so that's where you get the straight line speed

In this game, the speed out of the corners is what decides if you overtake or not. In career mode, this might get you past 2/3 drivers.
You can adjust your fuel load for the race. You can start with less fuel which makes the car lighter = makes the car the slightly faster

Some fast corners, let off the accelerator instead of braking. Some don’t need brakes at all, so braking will lose you loads of time
