Interesting experiment! I'm kind of leaning toward your thought that they should have been harvested earlier than you were expecting. They looked really good about day 5 or so. I would have waited also, but having watched this now, I think you got a fast growth. Wish I knew more about mushrooms - I have no extra information, just a hunch based on your thoughts about it.
