    after cutting cooked potatoes put in Fridge till totally chilled... then cook. they wont fall apart and will brown better

      Wow thanks, what a great tip! My 15 yr old son loves to make fried potatoes but complains they end up too soft, so we will definitely be trying this tip asap.

    Bells are great, I use the serranos & jalapenos green & when they turn red. Love taters, onion, & chilies. Great work . Thankyou.

    Larry, There is a faster way that will save you a half hour. Heat a frying pan to medium , using equal amounts of oil and butter. While that's happening, cut the "tates and veggies to sise. Put every thing in the pan and give it a good stir to coat everything with the oil and butter. ( butter adds a richer flavor) . Cover the pan and cook for 8 minutes. Uncover and stir. Recover for 8 more minutes. Uncover , season to taste, ( salt, pepper, paprika, and any other herbs and spices you like, stir, and recover for 8 minutes and they are done.

      This is our family’s tried and true method, and the key is to use a lid/cover to allow them to get tender and then remove and turn up heat and let potatoes get as crisp to personal preference.
      Same method as fried chicken in a pan- they seem to not understand the lid is vital and they’ll brown even with a lid

    I make my potatoes with both red and green bell pepper because it adds more flavor.

      Good point. Since sweet red peppers became more readily available, I kind of lost my taste for the slight bitterness of green peppers, but I can still fully appreciate why the contrast still works for you. Thank you for writing!

      Yes. I just made it as you did and had it with poached eggs fifteen minutes ago. Very good. My wife and I will have it again. It takes time but it is worth it and the ingredients are inexpensive. Thanks.@@LarryRichardson

    I would have thought that as the potatoes were already cooked that the vegatables would have been done first. In England this is close to what we call "Bubble and Squeak" which uses left over potatoes and vegatables from the Dinner or Lunch even the previous day. That would be mushed up rather than kept in separate lumps but the principle is the same.

    Well no wonder I have so much trouble frying them all together…I don’t precook the potstoes and I slice them as in regular fried potatoes and then the onions and peppers either tend to burn or added later they don’t cook right. I pan fry the veggies separates and before the potatoes are done, I mix them all together then. I’ve seen relatives put sliced potatoes raw and all those veggies raw,,together from the start,,put a lid on them and steam as much as fry but lower temp so they’re don’t need stirred a lot. Their’s come out fine…but I don’t seem to have that knack.

    Use Idaho spuds - russets, cut the time and don't boil - cube and fry maybe 20 minutes with veggies. Everything else same. Nice. Thank you for sharing.

    "Hala-pin-ya" for the win. Lol. Nice video, although as far as the potatoes go, I get the same result without the boiling process. Been making this for years but instead of bell pepper, I use matchstick carrots.

    What do you use if you are allergic to onions?

      I would use a wider assortment of peppers. Sweet red pepper, green pepper and jalepenos (if you like heat) should work well. Hope this helps.

    Easier way to do the Potatoes is rub them with some olive or any oil of your choice pierce them with a knife put them in the microwave cook on one side for 2 minutes and the next side 2.5 minutes all done

    What are you cutting your veggies on? It looks like a metal pan, I can see all the knife marks in the metal surface. You are wrecking the edge on that knife!! My family is partial to using butter instead of oil, the butter gives the potatoes & veggies a much better flavor. If your afraid of the butter burning, mis the butter with the oil.

    You are making more work for yourself.I cut raw potatoes onion and green pepper.I use oil and butter.Fry for about 45 min. covered.Stirring often.Add tons of garlic.
