      Yes Chef,both and was pure hit.
      Now is the season,also risotto is often on my menu.
      For the soup I prefere white asparagus.

    A wonderful soup! Yet I don't see chef Majk using the peels for anything when prepping the garnish.
    I've always learned to use to the peelings as a base for a stock. So I'll try this recipe tonight using my old school method: peel all the asparagus and cut a small part of the bottom and using the peels and wooden ends to make stock with some onion, mace, bay leaf and black peppercorns (max 30 minutes cooking or else the peels will give off a bitter taste). No need for passing the soup through a sieve when using peeled asparagus parts. Then when chef Majk adds water, I'll be adding the stock. I think this should elevate the dish even more since the stock already has a strong asparagus flavour.

    Chef Majik please purchase for yourself a Vitamix blender and a Vitamix stick blender. With a Vitamix blender you do not have to strain the soup through a chinois. It will blend soup with the skin of asparagus even more silky smooth than if you strain strain it through a chinois.
    And you can hazel nut cream mixture with a Vitamix stick blender in your pot so as not lose any part of the mixture.

      There will be plenty of the solids left.
      If you leave the peel on, always strain.

    What are the green petals? In the English transcript, they are called "nasturtium flour."
    Do you provide a written recipe with ingredients anywhere for this dish with quantities?

    If you can source the asparagus from a farm with sand soil then it is fine to keep the peel.
    If you are not sure then peal, the result will be bitter otherwise.

    At 6:30 minutes into the video the transcript says add “nasturtium flour. ” The video shows you adding green petals of some flower. What are those petals?

      Flower. Nasturtium is a great plant where both flowers and leaves are edible and beautiful.

    I was thinking about making a dessert with Ice cream beer and pumpkin puree and maybe some pumpkin in sous vide. Do you think it is possible to make a good ice cream using beer?

      Yes for sure, I had some of them in the restaurant. The bigger question is if the pumpkin will be good in the desert and with beer. But interesting idea overal

      A jeste jedno prani. Abys udelal nejakou typickou domaci prasarnu nebo bezny domaci jidlo ala fine dining. Neco jako brambory na loupacku 🙂 vim, ze nemas kanal jen pro cechy ale treba anglickou snidani trochu fine dining by lide ocenili 🙂 ani nevim, jestli mas nejake snidanove jidlo. Jinak super tvorba, hodne receptu jsem zkousel a je to ve finale jednoduche. Jsi skvela inspirace 🙂
