Helo chef, try niyo po yung sawsawan na vinegar( preferably Rose brand), puting sibuyas, asin, paminta,siling labuyo at medyo madaming asukal...perfect para sa kalamares
Chef, kakapanood ko lang kaninang umaga yung salt & pepper calamari recipe mo gagawin ko sana kaso wala pa akong cake flour. Hehehe pwede naman palang Cornstarch. 😅 gagawin ko na yan bukas. Thank you, Chef! 😊
I also don't like using breadcrumbs as a coating for calamari because it becomes hard, nakakasugat ng ngala-ngala lol. You can also use a combination of potato starch and rice flour as a coating; it tastes better and doesn't get soggy. One of the best recipes for fried calamari is the one by Ninong Ry, minus the Knorr seasoning. I like this recipe as well.
I like thick breading actually as long as substantial din yung mismong meat na nacoat nito. For me, if thick ang breading, no need to eat rice or other carb at mas malasa dahil sa seasonings sa breading at dapit mas kapit yung sauce. Pero now, im on diet kay thin breading nlng or iwas fried food if possible.
