KFC or any fried chicken chains using pressure cookers cook at a way lower temperature than your usual 350 or higher degrees with a regular pot frying. kfc changed their cooking method, they cook at a lower temperature, lower pressure and for a shorter amount of time which is why original recipe is rarely crispy now.

My only comment is that with a small cooker and so much oil there was a much higher risk than needed for that to explode. If you want to do this at home, use a large cooker, with a pressure vent, and you only need 2-3" of oil let the rest be air space as air compresses (causing the pressure) while liquids will not. Having the vent that releases at a specific pressure not only is big for safety in this case but allows all the moisture and steam to excape during the cooking process leading to a better product.

You needed sage in your spices. Sage makes it taste like KFC original. Also, if you would use an egg dip before batter dip you would get more flower to stick. Also, you want to get as much of that grease off as possible. That means you need to put it on some paper to soak off the hot grease.

Quang, I've been trying fried chicken for years know, looked al lot of YT vids. I even copied your sweet-sour sauce. Let me tell you one trick I've learned and is really good... Don't use 100% flour but use a mixture of 70% flour and 30% corn starch. It really makes a difference.
modern pressure cookers use silicone seals which are good for 500+ degrees, way above the 350-375 degree oil temperature. however no modern pressure cooker will say in it's manual that it can be used for pressure frying, purely for legal reasons. a pressure cooker full of oil is no more of a bomb than a pressure cooker filled with water, in fact the oil-filled cooker won't build up any pressure unless it has food in it containing water that will turn into steam, creating the pressure.
The reason we don’t use pressure cookers at home is you create an oil bomb in essence. You can buy catering pressure cookers that can be used at home which are totally safe.
The gaskets aren't designed for frying in oil and the pressure is too high. In the old days you could buy a Wearever Chicken Bucket which was a low pressure oil fryer. I'd hate to see someone injured trying this out with an unsuitable pressure cooker.

Fresh ground hamburger and homemade tenderloins. The meat came from the families meat locker half a block from each other. Best food ever. I learned a lot from them.

Tip: Add a little water to the flour until it gets just a little bit lumpy & shaggy. That gives you those thick crinkles of breading like at KFC.
