How to Purchase and Freeze Peaches

  • The peaches in this video were purchase at our State Farmer's Market directly from the farmer - DUBOSE ORCHARDS, INC. which are located in Monetta, South Carolina. They were pick the same morning I purchased them. These peaches were picked and graded in the orchard and were not handled again until I got them to my kitchen. Peaches are one of the easiest fruits to freeze. Just wash, peel, coat with sugar, pop into the freezer bag and into the freezer, that's it - your done. Peaches are a very healthy fruit with good amounts of lutein needed for good eye health, potassium and magnesium to keep blood pressure in check and keep your heart in good rhythm.     While at my grandmothers during the summer we would can sometimes six bushels at a time and there was just not room in the kitchen to do the boiling water and then the ice water , she only had two ice trays in her freezer so that could not have worked for us. I wanted to show how we did peaches on the farm. Granddaddy would sharpen all the paring knives and everyone peeled peaches while grandmother told us stories and washed jars for canning. It was a very sticky job for sure. Thanks, Phyllis

    I don't think I have ever seen anyone peel a peach with a knife, we always dropped them in boiling water and then ice water and peel the skins right off.. I'll have to try that! I love peaches with just cream on them,, so yummy! Thanks!

    My darling Miss Phillis don't work so hard. Drop each peach into boiling water for 15 to 20 seconds take out of water and drop into ice water. Skin slips right off. Works for tomatoes too. Peaches look so good making my mouth water.

    Salobrena, No you don't have to add sugar but sugar is a type of preservative. If you don't add sugar I would suggested that you use Fruit Fresh which is powdered vitamin C. They can be frozen just as they are without adding anything. Hope this helps, Phyllis

    Phyllis, I remember in1962 I worked at a ice cream store for 50 cents an hour. We worked very hard for that money. I made enough to by my school clothes for the next school year. When I think back it is amazing how expensive things are today. You reminded me to start to look for the lady that sells peaches on the side of the highway here (its will be alberta or hales).     Hi Mimi, Great to hear from someone from that part of N.C. I spent many summer vacations visiting with my first cousins in Candor, N.C. My uncle Marvin Cole was mayor there many years ago. Marsh Cole was a year young than me and Barbara was closer to my sister's age. They owned a country store just outside Candor. We use to go to Blake's Restaurant after church on Sunday. Last time I was up that way the restaurant had moved out by the interstate highway, it was a real 1950's diner. Phyllis

    Phyllis you bought back some great memories. We would sit around with my great grandmother, my grandmother, great aunts, and of course us teenage girls with a huge galvanized tub in the middle of us all, peeling and cutting up peaches for jams, pie fillings and pickling. Listening to all the stories the older ladies would tell us. Same thing with corn. Husking and scraping for freezing and canning. I just loved those times. Thank you Phyllis.     Nothing better than SC peaches.... Mmm so sweet and good. When I want them for canning, I ask for over ripe ones. The vendors will sell them for a cheaper price just to get rid of them, but you must work quickly before they spoil.

    Thank you Miss Phyllis for all these freezing videos. I wonder if you have tried to peel peaches , apples and potatoes with a Tupperware peeler ? It has a serrated side for peaches, my mom did it that way. She said that she saved more of the fruit. Funny how we do lots of things the way our moms did them.

    I freeze and can peaches, about 100 quarts every summer, and I peel them by putting them in boiling water for a few seconds until the skin loosens. Then you can just rub it and the skin comes right off with no waste at all! I do my tomatoes the same way. I understand why she chose to work her peaches when she did, but they would have been much better if she could have waited just one more day, two at the most!

    Just love to hear your stories, my husband heard your voice & came in to sit & enjoy. When the US gov changed the laws years ago regarding how ripe (or unripe, really) fruits were allowed to be when picked & shipped, they had no consideration for those of us who cannot grow certain fruits because of our cold winters. You would not believe what we have to go through to get a decent peach, nectarine or plum! sometimes entire bags full go in the trash, they get mealy before they ripen. It's sad!

    What a great haul!
    Reminds me of growing up in Greenville and Anderson SC.
    We would travel thru Gaffney SC (big peach water tower) on the way to my grannies house in Mount Airy (Mayberry) NC.
    We would stop at the pack houses and get peaches.
    I remember all the yellow jackets, I think the yellow jacket is the SC state bird? :)

    We were sad to hear that we lost our peach crop, due to a late freeze. Most folks don’t think about Oklahoma even HAVING peaches, but we do!

    I LOVE your stories about your history with peaches. I grew up in NC and still live there. We get our peaches from Candor, NC, a just a few minutes down the road. I LOVE the ice creams they make at the farmer market stands....thanks for the video!

    I actually only drive about 20 mins away.... and pick mine and get to eat as many as we want while pulling a red wagon and baskets!!
    That's one of my favourite things to do in July... Make peach preserves and can them....
    I am ALWAYS PROUD to give jars away.... We ALL enjoy them...
    WOE Idk that California was 1st... and then South Carolina!!.Your RIGHT ALWAYS hear of Ga. peaches...

    Our Field stopped for few years... Also has Apple trees In Mt. Juliet,Tn. it's called Breadnes... spelling wrong... A new family has taken over and checked it out and they've got it looking good.... which makes me EXCITED!!
    You can stop and buy them already picked but cheaper pick yourself.... I've ALWAYS enjoyed doing it ...

    Have you ever used a potato peeler to [eel your peaches and apples. You don;t seem to waste so much of the fruit. L have used one for years.

      Actually the way to do it with the least waste is to drop the peaches into boiling water for a very short bit the way you do with tomatoes when you peel them. After you take the peaches out of the boilding water, the peel will pull right off and not take any meat with it.

    Have you ever tried putting the peaches in boiling water, like you do tomatoes, it makes peeling a breeze and all the red transfers to the peach giving them great color?

      Yes, I have put the peaches in boiling water to help with the peeling but only when I am freezing them and doing a whole bushel. Very easy way to peel peaches. Good Tip.

    Can you use Splenda or the Baking Splenda instead of Sugar ?? Diabetics in this house.....What about freezing without sweetner ?? Thanks so much !

      Margo Erne Hi Margo, I've never used Splenda for freezing but I'm sure it would work fine. You can freeze without sugar or any sweetener.

    I’m crying at how much peach 🍑 you’re cutting off 😭 drop them into boiling water and that skin will peel right off and not a bit of peach 🍑 is wasted . They look like clingstone peaches to me, meaning the peach don’t wana let that stone go.. cling-stone. they’re a lot bigger than the peaches they send up to us in the North, Queensland Australia 🇦🇺
    Our peaches 🍑 at Woolworths at the moment are $3.50AU kg which the currency converter tells me is $2.34 US I intend to grow my own tree 🌳 Down South they are probably much cheaper and available at the farmers markets

      They are definitely clingstone peaches. If they were cling free, she could just cut them in half and lift the pit out without destroying any of the fruit.

      @@sortathesame8701 my mother would can clings whole,& some she would pickle especially the smaller ones. She would boil the peelings with little water added to make jelly with or can juice or freeze juice for use later. Cobblers or whatever
