You need to use the rotation, offset, and symmetry modes. Thats why the parts dont snap like you would like them to. You didnt adjust any of them.

Very Pro Tip from one of the KSP Players Who Logged Thousands of Hours in The Game (I'm one of them) :
1. The big circle with the square in the middle is for symmetry. Click on it to toggle on / off; turning it on enables you to build two parts at both sides perfectly.
2. The smaller circle with another circle and a dot is for angle snapping. Turn it on (Inner circle turns hexagon) to build wings, elevators, rudders, engines, etc perfectly at angles in the increment of around 22.5 degrees.
3. Notice the four tools next to the upper portion of the parts list? That's for fine-tuning. Offset allows you to move parts, rotate, well, literal meaning and re-root will re-root your build. Basically allows you to change which part is your starting part, in which a part that if you click to move it, it will move the whole build.

Toggle the snap (the small button with a circle drawn near it close to the symetry button) that will help. Also check the center of mass and lift. Always place the center of lift slightly behind the center of mass, do that and you are ready to go

The wing attachment issue can be sorted by pressing the circle with a dot in it next to the button where you can duplicate your items the circle with the 2 squares in it

Tip: When placing wings, press c to toggle snap. It helps a lot. Plus, you can just place them however and use the 2 or 3 buttons on your keyboard to adjust the parts as you please.

On the under left you see a circle,if ypu hit c ot will become a hexacon, if it is a hexacon you can put part on properly, the circle is used when you dont want to snap parts
