I'm like you with regards to having all the flights, trains and hotels reserved and locked in, but I also check out the best restaurants according to locals (in my case Italians) to have a base to begin with when it comes to where to eat dinners. Regarding a B2 in German, that's enough to have decent conversations and get things done. Going deeper requires living there and getting involved there. And immersion is the only way to go, after learning the basic rules of grammar. Gradually you get better at understanding and it becomes a second language. When you are thinking in German, you're there. Regarding bridges, my fave was also the Sydney Harbor bridge, like you, followed by Ponte Vecchio here in Firenze, and the Golden Gate Bridge in the Bay Area.
I always thought of “pennies on the dollar” as denoting a small percentage, not just any percentage. I would use it for buying something at a bargain or sold under duress so is therefore a good deal.
The part about being vegan while traveling to all these locations around the world really hit home, exactly my thoughts and glad to hear someone else feels the same way!

We're doing a Bergen to Palermo trip in spring 2025 and it involves taking German trains from Kiel through to Zurich (staying overnight in Stuttgart). What advice would you give us for how long to book in advance and how long to leave for changing trains? Thanks in advance
Part of your Titanic video could come from your Canada trip. We did VIA rail The Ocean train from Montreal to Halifax NS - there's an absolutely brilliant museum that covers the Titanic because lots of victims were washed up/recovered there. They are buried in 3 cemeteries there. It's a really interesting and surprisingly sophisticated small city. Might see you on VIA rail Train 1.

After visiting berlin and arriving at the new airport i would love to watch the why can't DB run on time. Oddly i was told after my awful ride on the RB service that its actually quicker by bus and underground.

The Maritime Museum in Halifax has a genuine deckchair from the Titanic which, as fan of British idiom, amused me greatly.
