How to Identify Oyster Mushrooms

  • In this video we take a look at a small group of Oyster mushrooms and we go over their identification features, as well as discuss what kind of trees they seem to prefer. The Oyster mushroom, or Pleurotus ostreatus, is a common mushroom that is commonly foraged in the spring and fall and varies in size from an inch or two all the way up to six inches or so.
    There are several mushrooms in the Pleurotus genus several of which are edible, however none are rated higher than this species. Frequently growing on Tulip Poplars, and sometimes Maple in my experience; the Oyster is named for it's shape and not it's taste.
    A small mushroom that grows in groups or clusters, it has a fruiting body that is shaped like an oyster with generally a tan cap. Oftentimes when young the cap will start fully white, and fade towards the tip to a tan color. This is a shelf mushroom which has gills. Thankfully the gills are unlike most gilled fungi in the sense that these gills are forked, or decurring and run down the stem.

    Those are flat crep, I noticed right away due to the edges and coloring. Oyster mushroom edges only do that when larger or older. cooking up some just gathered right now.

    Thanks for the video. I found a bunch today. I am an expert on edible wild plants, but I am not very knowledgeable of mushrooms. Tonight's dinner will be omelets with wild oyster mushrooms, and tomorrow night spaghetti with clam, oyster mushroom, and portabelli.

    Angel wings tend to grow on conifer trees (pines). So watch out for white shrooms on pine trees that look like oyster mushroom!!!

      I was deer hunting while filming this video, that's why I'm whispering. Would be crazy if the mushrooms could run away though, it'd make it so much harder to hunt them!

    I have something like this at my house, but they're small about the tip of my finger. they look like clam shell and gills underneath.

    You can find oysters on beech, normally hardwood, not normally on pine trees.

    Awesome, I've seen these mushrooms before but I haven't harvested or eaten them yet. Definitely on the menu tho during mushroom season this year. Lol.

      First off, I love your name as I named my cat Simba, (not original I know). Angel wings will grow on coniferous wood like pine and hemlock trees and Oysters will grow on hardwoods like poplar, maple, oak, and more. Another easy way is that angel wings don't normally grow in cluster like oysters do and usually grow stalk less. Where as Oysters have a very prominent stalk to them. Hope this helps a bit and thanks for asking!

      @@TrilliumWildEdibles thank you, yes, it helps. I recently went for mushroom hunting near mt. Adams in Washington state. Last year I picked very good white chanterelle mushrooms, but couldn't find same spot where was it. And this year I saw this mushrooms that looks like oysters, even smell was similar, but something inside myself was telling me that something is wrong with this oysters.     I just found some in my area and been scanning from one video from another and your video really confirms that what I found is not oister mushroom. Im not an expert but i remember my grandmother back in our village cooking mushroom look like this..

      Congratulations! They are yummy. The summer ones can have problems with bugs, especially little black beetles sometimes which can make them tedious to clean but still very good!

    These look too white in some shots and are too small to give a definitive identification. They look like the poisonous angel wings in some parts of your video.

      In the early fall where I live we get a lot of white colored oysters, the ones in the summer are really bright. Usually ones like this turn brown with age. The angel wings I find are generally much smaller than this and usually have a flatter cap. Opposed to this that has an undercurl on the margin of the cap. I didn't think it was an oyster at first because there was only one, but then again I've seen them growing singularly before though it is rare. Thanks for commenting Stephen!

      I didn't eat this one in the video because there was only this tiny one, plus I was deer hunting that day. The ones I gather in the summer are delicious, they taste like typical oysters to me. Really no difference in flavor. However the white ones in the summer are usually filled with black beetles that are a royal pain to remove because they burrow into the flesh of the mushroom. Also I find they are much softer than the brown variety and don't always hold their shape easily. I still hunt for them when the season presents itself and love to use them with chicken dishes and Asian style dishes.
